Ingredients

  1. 1/3 cup mayonnaise
  2. 1 teaspoon lemon zest
  3. 1 lemon, juiced
  4. Salt and freshly ground black pepper
  5. 1 stalk finely chopped celery
  6. 1 finely chopped shallot
  7. 1 tablespoon finely chopped fresh tarragon leaves
  8. 1 tablespoon finely chopped chives
  9. 3 lobster tails cooked (about 1 pound lobster meat), chopped
  10. Lemon slices, for garnish
  11. Dry rub, for garnish (recommended: Neelys)

Instructions

  1. Combine mayonnaise, lemon zest, lemon juice, salt and pepper, celery, shallot, tarragon and chives in a bowl.
  2. Add lobster meat to mayonnaise sauce and combine.
  3. Rub the rim of 4 martini glasses with a lemon. Dip the rim in some dry rub. Divide the lobster salad between the 4 glasses. Garnish with dry rub and lemon slices.

Excellent, I just added celery seeds vs the chopped celery and a dash of Old Bay for a kick. The Neeley’s hit it out of the park with this one. I even love how it was served in the martini glass.
