Ingredients

  1. 1 gallon milk
  2. 3 cups sugar
  3. 3 tablespoons vinegar

Instructions

  1. In a large stockpot, add the sugar to the milk. Bring to a boil. Separate with the vinegar. Cook until water disappears and only the solids are left and caramelized (about 3 hours). Serve with queso blanco and/or candied fruits.

I just made a batch of this and I followed the recipe exactly. The milk curdled when I added the vinegar. I keep cooking and stirring, hoping some magic would happen and I would end up with dulce de leche. The resulting slop was sweetened cottage cheese – a far cry from dulce de leche. It is revolting.

I always wanted to know what made the Dulce the Leche thick and then I tried this recipe and I found out it was the vinegar i was missing. Thanks to this recipe now, I know how to make this lovely candy. I noticed that it’s really important to put the right amount of vinegar because if you don’t, it might end up soggy.. don’t put too much and don’t put too little.
