Ingredients
- 1 cup canned black beans (about half a 15-ounce can), drained and rinsed
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons finely diced red onions
- 1/4 teaspoon ground cumin
- 2 plum tomatoes, seeded and diced
- 1 lime, juiced
- 1/2 red or green bell pepper, diced
- 1/2 jalapeno, finely diced
- Salt and freshly ground black pepper
- 2 medium avocados (not too ripe), sliced in half and pitted
- 1 tablespoon olive oil
- 1/2 teaspoon chile powder
- Salt and freshly ground black pepper
- Tortilla chips, for serving
Instructions
- Prepare a grill for medium-high heat.
- For the black bean salsa: Stir together the beans, cilantro, red onions, cumin, tomatoes, lime juice, bell peppers and jalapenos in a medium bowl until well incorporated. Season with salt and pepper.
- For the grilled avocado: Brush the cut sides of the avocados with olive oil and place on the grill cut-side down. Cook until charred, about 1 minute. Season with the chile powder and some salt and pepper.
- To serve, fill the cavity of each avocado with the salsa and serve with tortilla chips.

Loved this! My review is more for the preparation and not the salsa. I had just purchased a tub of our favorite local salsa, so I used that instead. The thrill was taking a completely good avocado and preparing it in a way I never would have thought of. Warm avocado? Husband was skeptical but I insisted that we try it. We were both amazed at how easy and delicious it was. Took the avocados off the grill, filled with salsa and plated with fresh tortilla chips. It was like a personal gourmet guacamole salsa bowl. I highly recommend this!
Loved this recipe! Took a bit longer to prepare than advertised, but that’s all right; it was delicious! I’ve never made my own salsa before, so this was an excellent start. I might even add more lime juice next time; I could barely detect it. I also didn’t have a grill, so I just tried to cook the avocados in the oven. They never got soft, but that’s probably just my fault (although it would be nice if the recipe gave some non-grill cooking instructions for beginners!). I then scooped out the avocado and mixed it in with the salsa. It was awesome! Will definitely be using this one again! Perfect for the one true king of Westeros.
