Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup brown sugar, firmly packed
- 1/2 cup Filippo Berio® Extra Light Olive Oil plus some, for greasing pan
- 1 1/2 cups applesauce
- 1 cup raisins
- 1 cup coarsely chopped walnuts
- Powdered sugar for dusting or sweetened whipped cream for frosting, optional
Instructions
- Preheat oven to 375 degrees F.
- Grease a 9-inch square pan with olive oil. In a medium bowl combine flour, baking soda, cinnamon, nutmeg, and cloves.
- In a large bowl mix brown sugar and olive oil on medium speed with an electric mixer. Mix until blended. Add applesauce and mix well. Add flour mixture all at once. Beat on low speed until well blended. Stir in raisins and walnuts. Spoon batter into the prepared baking pan.
- Bake 20 to 25 minutes or until lightly browned.
- Cool completely on a wire rack. Cut into squares. Serve plain, dusted with powdered sugar, or frosted with whipped cream.

DETEST olive oil so will try with Canola oil…..cloves can be overpowering so will reduce that amount.
Amuda R. I suspect the tinniness came from too much cloves and nutmeg. I reduced these by half and added 1/2 tsp of salt to the recipe, it really came out delicious 🙂
Outstanding! Very moist, great out of the norm holiday desert. Whip up a little “FRESH” whip cream and aaahhhhhhh: I’m not a big fan of cloves so I used a 1/4 teas. of ground cloves instead of 1/2 teas. and I liked it much better. Thanx & Happy Holidays!
