Sweet and Spicy Cast Iron Kettle Corn

Ingredients

  1. 2 Tbs. vegetable oil
  2. 2 Tbs. butter
  3. 1/2 cup raw popcorn kernels
  4. 1/4 cup sugar
  5. 1/2 tsp. cayenne pepper
  6. 1 tsp. salt

Instructions

  1. Preheat grill if using. Place a large cast iron skillet on grill with vegetable oil in it. Heat until almost smoking. Pour in remaining ingredients and cover skillet. Shake skillet gently while wearing an oven mitt, constantly while corn pops. Remove from heat and pour into a large bowl. Don’t let it go too long in between pops or the sugar and butter will burn. It’s better to have some “old maids” than burnt popcorn.

Made this just now. Hubby loves fair kettle corn. Was easy to follow. Used Dutch oven cast iron pot with glass lid to keep an eye on popping. We buy Amish kernels from local store here. Turned out fantastic. Popcorn had crunch, sweetness and saltyness balanced nicely. I let it sit a minute too long after popping in pot while grabbing bowl to pour it into. Best to have things ready so no burning of sugar happens. Thanks for sharing the recipe!

Just made this tonight and it came out great! I think I added a little too much popcorn because I had a decent amount of “old maids”/kernels. Overall was pleased and will make again.
