Ingredients

  1. Nonstick cooking spray, for greasing the pan
  2. 1 1/4 cups all-purpose flour, plus more for flouring the pan
  3. 1 1/2 cups shredded red cabbage (about 1/4 small head)
  4. 1 cup sugar
  5. 2 tablespoons apple juice
  6. 2 large eggs
  7. 1/2 cup vegetable oil
  8. 2 teaspoons baking powder
  9. 1/2 teaspoon fine salt
  10. 1/2 teaspoon cinnamon
  11. 1 1/2 cups Greek yogurt
  12. 3 tablespoons mild honey

Instructions

  1. For the cake: Preheat the oven to 350 degrees F. Grease and flour an 8-inch square baking pan. Line the bottom with parchment and spray with cooking spray.
  2. Pulse the red cabbage in a food processor until pureed. Add the sugar, apple juice and eggs and process until well combined. With the motor running, add in the oil and process until combined and emulsified.
  3. Combine the flour, baking powder, salt and cinnamon and whisk to combine. Add to the food processor and pulse until just combined. Pour into the prepared pan.
  4. Bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Let cool. Turn out onto a plate and remove the parchment.
  5. For the frosting: In a mixer fitted with a whisk, beat together the Greek yogurt and honey. Frost the cake and serve.

It’s a great recipe! I used self raising flour (no need of baking powder) and I added vanilla essence instead of apple juice. Forgot the cinnamon but it was still good!

Surprisingly it was actually good. We made it as a joke to our roommate who kept saying we should make a cabbage cake, but it was delicious. The only thing was that as it was cooking the house reaked of cabbage.
