Pasta with Peas and Sausage

Ingredients

  1. 1 cup minced onion
  2. 1 tablespoons olive oil
  3. 3 links sweet Italian sausage, removed from casing
  4. 2 cups tomato sauce
  5. 2 cans (15 1/2 ounces each) Le Sueu peas, including liquid
  6. 1 1/2 cups water
  7. Salt and pepper to taste
  8. 1 teaspoon dried basil, crumbled
  9. 1 pound elbo or baby shells
  10. Freshly grated Parmesan

Instructions

  1. In a large saucepan set over moderate heat, cook the onion in the oil, stirring occasionally, for 5 minutes. Add the sausage and cook it until no longer pink. Drain, then add the tomato sauce, peas and liquid, water, salt, and pepper, and basil. Bring to a boil and simmer for 20 minutes. 
  2. Meanwhile, in a large saucepan of boiling salted water, cook the macaroni until barely tender, drain, and add to the sauce. Simmer until heated through. Let stand for 5 minutes before serving. Serve with the Parmesan.

I HAD A CRAVING THE OTHER DAY FOR THIS DISH, HOWEVER I DID MINE A BIT DIFFERENT. I USED GROUND ITALIAN SAUSAGE, BROWNED, ADDED A 1/2 FINELY CHPD ONION AND ABOUT A TBS OF FRESH MINCED GARLIC AND HOT PEPPER FLAVES TO TASTE…..I LIKE IT SPICY!  WHILE PASTA WAS BOILING, ADDED MAYBE A CUP OR SO OF VEG STOCK TO SAUSAGE PAN, LET IT SIMMER AND REDUCE A BIT. WHEN PASTA IS ALMOST DONE I ADD THE FROZEN PEAS SO THEY DON’T TURN TO MUSH. WHEN PASTA WAS DONE MIX ALL TOGETHER, PLACE IN SERVING DISH AND SPRINKLE WITH GRATED PARM OR ROMANO AND SERVE…YUM! SHARED SOME WITH A NEIGHBOR AND SHE LOVED IT

Try it with two cans of whole tomatoes crushed by hand instead of tomato sauce. Much better flavor That’s how my family used to make it.

I use hot sausage for more flavor, frozen peas for color and taste and also  fresh basil.  All of that gives this nice recipe lots of flavor

Not a terrible recipe. I did think there was too much liquid going on considering the 2 cans of peas with liquid PLUS water; I didn’t even add the full amount called for, and it still came out a bit watery and bland. I like peas but there were just too many. Every ingredient sounds good but the amounts are not right, I may go through the reviews for a tastier revision to this recipe…

Very similar to a pasta dish my mother used to make years ago. Delish and brought back lots of memories. I used spicy chicken sausage which made it healthier and more flavorful.

Made the recipe as stated. Too many peas, one can enough. My husband loved it but I find it a bit bland. Too much pasta and not enough sausage; needs some more seasoning. Thinking of adding fresh asparagus blanched with the pasta. The flavor is good but I could taste too much peas and I like peas.

Great recipe! I thought it was a little bland at first though, so I added 2 tablespoons of Mc Cormicks Tuscan Style Italian Seasoning. Also used 2 cups of frozen peas instead of canned and used the pasta water. We love sausage too, so I used 5 links (I don’t think the doctor would mind it’s so good!), and because I didn’t have any elbow macaroni I used penne noodles and it was wonderful! We’ll be passing this one on to family for sure!

I thought this recipe was pretty good. I cheated and used a jar sauce with some spices in it, and added 2 tsp. of red pepper flakes for heat. I halved the recipe, because a full box of pasta is more than 4 servings, but I didn’t cut down on the amount of sausage. I thought the peas added a great flavor to the sausage and pasta, and it was an easy one-pot meal. I will definitely make this again.

THIS SURPRISED ME. I DIDN’T EXPECT IT TO TASTE SO GOOD. COUPLE OF NOTES; I DIDN’T USE TO CANS OF PEAS ONLY ONE, I USED THE PASTA WATER IN PLACE OF THE WATER. THIS MADE A GOOD AMOUNT AND IT WAS DELICIOUS.
