Ingredients

  1. 2 ½ cups all-purpose flour
  2. 2 cups white sugar
  3. 1 ½ teaspoons ground cinnamon
  4. 1 teaspoon baking soda
  5. 1 teaspoon ground nutmeg
  6. ½ teaspoon salt
  7. ¼ teaspoon ground ginger
  8. ¼ teaspoon ground cloves
  9. 1 cup pumpkin puree
  10. ½ cup vegetable oil
  11. 2 large eggs
  12. 2 cups peeled and chopped apples
  13. ¼ cup white sugar
  14. 2 tablespoons all-purpose flour
  15. ½ teaspoon ground cinnamon
  16. 4 teaspoons cold unsalted butter

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan.
  2. Combine flour, white sugar, cinnamon, baking soda, nutmeg, salt, ginger, and cloves for cake in a large bowl.
  3. Combine pumpkin, oil, and eggs in a medium bowl. Add to dry ingredients; stir just until moistened. Stir in apples. Spoon batter into the prepared pan.
  4. Combine sugar, flour, and cinnamon for topping in a small bowl. Add butter and cut in until crumbly. Sprinkle over the batter.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes.

I made this for an office meeting and it was a hit! Loved the moist, bread-like consistency with the apple/pumpkin flavor. I might start making this instead of my usual pumpkin bread, which always seems too dry for my tastes. Saving this one for sure!

This is some of the best coffee cake I’ve ever had. I love the combination of apples & pumpkin. I didn’t peel my apples & I substituted approx. 3/4 cups of honey for the sugar. I followed the rest of the recipe as written. It’s easy to make, has excellent flavors & my family loves it. I’ll be making this again!

I tripled the streusel mix, added some cardamom, did 3cups of chopped apples and didn’t peel them. I added a ginger cream cheese middle layer. Ended up having to bake for 2 hours. Turned out DELICIOUS!!!!!! Will make again!
