This is a tasty and entertaining breakfast that’s also terrific as a snack or dessert!

Ingredients

  1. 1 apple, cored and chopped
  2. ½ cup crispy rice cereal squares (such as Rice Chex®), crushed
  3. 2 teaspoons ground cinnamon
  4. 2 teaspoons coconut oil
  5. ½ cup sliced fresh strawberries (Optional)
  6. ¼ cup chopped walnuts (Optional)

Instructions

  1. Place the apple, rice cereal, cinnamon, and coconut oil into a microwave-safe bowl.
  2. Cook in a microwave oven until the coconut oil has melted, 30 to 45 seconds. Stir to combine.
  3. Serve topped with berries and walnuts, if desired.

Quick and tasty. I subbed some ingredients – Cinnamon crunch cereal and butter instead of coconut oil – and I cut back on the amount of butter and cinnamon. It was a nice change from the usual for breakfast.

I used this as a breakfast dish. It was just ok. Agree with another reviewer who said do not know why coconut oil is added and way too much cinnamon for one apple. I noticed too there was what appeared to be maybe yogurt or ice cream on top not mentioned in recipe. I added yogurt on top of mine. It also was not sweet enough for me. If I fix again I would add a little stevia, agave or honey.

I often chose recipes that can be easily adapted or modified. This seems to be an extremely versatile recipe and I thought it would be pretty hard to screw up. I am mom with a family of 4 (including myself) and this is what I had to take into consideration. 1. I’m trying not to eat a lot of unnecessary carbs. 2. my daughter hates cinnamon. 3. I was awake, hungry and everyone else was sleeping and 4. I didnt want to be in the kitchen all morning making it fresh every time someone woke up. We had 4 yellow delicious apples, so that’s what I used. I cut them up in my food processor after I cored them to save time. I put them in a frying pan with the coconut oil. after the oil melted, I took out a portion for my daughter and added cinnamon to the pan. After I mixed it, I took a portion out for myself. I added the crushed cereal to my daughters bowl and the apples still in the pan. I then dished out the two remaining servings. At this point I finished prepping my own bowl and left the families in the fridge so they could microwave theirs, add strawberries and walnuts on their own when they woke up. I added two tablespoons of hemp hearts and 1 tablespoon of flax seed to mine. It was tasty, but next time I probably wouldn’t even cook or heat the apples. I’ll melt the oil and add them to the apples. I’ll use pecans instead of walnuts as well. also, our family loves coconut oil and we use it often. I didnt feel the recipe called for much, but maybe it’s an acquired taste

this is awesome but seriously, microwaving it is just all out wrong lol. medium heat in a pan, add just a touch of brown sugar and cook the chopped walnuts in it too. cook until the apples are soft. Soooooo good! but also pretty sweet and small portions are all I can handle of anything sweet. Great kids breakfast, would be great addition to oatmeal and I really cant stand oatmeal. OOOOO or quinoa. this would rock with quinoa. mmmm. yeah, quinoa.

We had this for breakfast this morning. Both kids enjoyed it. We followed the recipe as written, but I didn’t crush the cereal, which made it even easier. We will make this again. It would also be a great snack or light dessert if topped with some whipped topping.

I used 1/2 the cinnamon and all the coconut oil called for. I melt the oil slightly first so it stirs into the mix better. All loved it except for our picky 7 year old.

I really loved this dish! I admit that the one reviewer’s post made me a little apprehensive about trying it, though. I, too, thought the recipe called for too much cinnamon and that the apples would end up being very raw with so little time in the microwave. I diced the apples in very small pieces and decided to use the amount of cinnamon the recipe called for. I didn’t have any Rice Chex, so I used Ezekiel 4:9 Almond Cereal instead. The 45 seconds in the microwave was perfect for me! The apples came out slightly softened, the cinnamon was the perfect amount, and the cereal was still slightly crispy. I topped it off with diced strawberries and a small dollop of fat free whipped topping. I loved the textures that were going on in my mouth! This is a delicious HEALTHY breakfast, snack, or dessert! Sorry but I did not care for this recipe. I don’t understand the need for the oil. All it did was give slighly warm raw apple chunks a slick coating. There is also way too much cinnamon for one apple and a 1/2 cup of rice chex.
