Enjoy the peanuttiest peanut butter cookie you’ve ever had because it’s made entirely of the stuff.

Ingredients

  1. 1 head lettuce, chopped
  2. 1 (10 ounce) can corn, drained
  3. 1 (15 ounce) can black beans, drained and rinsed
  4. 1 large tomato, chopped
  5. 2 green onions, chopped
  6. ¼ cup chopped cilantro
  7. ¼ cup diced green bell pepper
  8. 1 avocado, sliced
  9. ½ cup shredded Cheddar cheese
  10. ½ cup crushed tortilla chips
  11. ½ cup salsa
  12. ¼ cup ranch-style salad dressing

Instructions

  1. Layer lettuce, corn, black beans, tomato, green onions, cilantro, green bell pepper, avocado, Cheddar cheese, and tortilla chips, in this order, in a serving bowl.
  2. Stir ranch-style dressing and salsa together in a bowl; pour over salad.
  3. You can also make the dressing using sour cream and salsa. Freshly prepared Pico is also a good substitute for the tomato/onion/cilantro/pepper additions.

Took it to a dinner where the main course was shrimp tacos. Well received. I made it as written except left out the green peppers. I would make it again.

Wow. This is so good. We use jalapeños (and sometimes Serrano pepppers) instead of green bell. And my homemade garlic ranch dressing- 1/2 and 1/2 with Pace picante. Ranch dressing from Ranch Dressing II in this app, but I use 2 tablespoons fresh garlic.

I halved this recipe because I wanted to make another salad that called for a lot of the same ingredients. This was awesome. I really liked the addition of the crushed chips in this one. It added texture. I did use jalapeno instead of the green bell and then I had some sliced olives that needed used and I added them too. The one thing I did like better about the other salad was the dressing. It too had a ranch dressing base but it also called for taco seasoning and that was a nice touch. Regardless, this was a great salad and one I will make again. Thanks for sharing!
