This is absurdly simple and true. The key is to get the grill grate surfaces extremely hot. And the outcome? A surface that has been slightly caramelized and tastes somewhat smokey. The interior remains crisp and cold. There is a significant disparity in flavors and textures.

Ingredients
- 3 romaine lettuce hearts, halved lengthwise
- 1 tablespoon olive oil, divided, or as needed
- 2 tablespoons freshly grated Parmigiano-Reggiano cheese, or to taste
- 2 tablespoons balsamic vinegar, or to taste
- 2 tablespoons sherry vinegar, or to taste
- 2 tablespoons olive oil, or to taste
Instructions
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Brush each romaine lettuce half with 1/2 teaspoon olive oil.
- Cook romaine hearts, cut-side down, on the preheated grill until the cut-side is slightly caramelized but the inside is still cool and crisp, about 2 minutes. Transfer lettuce, cut-side up, to a platter. Sprinkle Parmigiano-Reggiano cheese over lettuce and drizzle balsamic vinegar, sherry vinegar, and 2 tablespoons olive oil over the top.

Absolutely wonderful. New EASY salad ! Thanks
Very easy and tasty!
Please don’t rate if you did not follow the recipe. Charcoal grilled, as written…very good. Steamed in a George will be soggy…duh.
It turned out great! My dinner guest were very happy with the taste and texture.
So simple and tastes great. I didn’t have any sherry vinegar, so didn’t use that. And I only sprayed some olive oil on them prior to grilling, nothing after they were done. I purchased this Cauliflower Jalapeno Cilnatro dip by Open Nature that I topped it with and it was AMAZING!!!
The recipe didn’t mention that the hard bottom of the romaine needs to be intact.i had to use cooking twine to keep it together. I added a little Ken’s Lite Ceasar Dressing to the recipe dressing that cut the vinegary taste,
This is a perfect, summer side dish!! While I am not 100% sure if I loved-loved the balsamic vinegar on it, I am scoring 5 stars because this basic, awesome recipe will be repeated….even if I might (might!) just do S&P + Parmesan cheese next time. Maybe try blue cheese crumbles once? I also like the idea of the broiler for the winter months! Thank you!!
Made just as directed and it was wonderful. Had bought a large package of organic romaine hearts at the local warehouse store and had lots to use up. Both times we made steaks on the grill and grilled while steaks were resting. Great alternative to the usual Caesar salad. Easy, easy, easy! Definitely a new favorite.
Been making this for years. Great recipe!
This was very good. Even my hubby who is not a fan of Romaine said it was good.
I needed to let it carmelize more on the grill. I pulled it off too soon.
Will definitely make it again. We love it!
No changes. Grilled over hardwood lump charcoal. Topped with fresh grated parm. This recipe is amazing. You can have the rest of your meal done and toss these on the grill for Two minutes. Stand over them… the Olive oil spills onto the coals and flares up, so keep them moving. I also finished with fresh cracked pepper and a small pinch of Kosher salt.
Made as directed. Delicious and is now a regular salad choice at my house.
This will be my new favourite “salad”! We loved it! I had another side of grilled veggies that had been marinating in a mixture of balsamic vinegar and a few herbs/spices so I used the rest of the marinade to drizzle on the romaine after grilling it. I might grill cherry tomatoes next time to also use to top off the romaine.
Oh my gosh!!! Super cool to serve to guests and so delicious!!!! Thank you!!!
I love this recipe! I put different vinegars to up the flavors!
A nice alternative to conventional salad. I opted for Roquefort instead.of Reggiano
So simple and delicious! My family was wary until they tried it. This has been added to my favorite recipe collection.
I thought we were grilling on charcoal tonight but instead I tried this on the George grill. It was ok. It was a mix of crunchy and soft lettuce. I highly recommend good cheese, not Kraft shaker bottle. My husband thought it was weird eating warm lettuce. I will try this again on the real grill the next time to really judge this recipe.
I am always looking for new ways to serve lettuce and this is a good one. I put this on the grill during the last two minutes of cooking my cod with spinach and tomatoes in a foil packet. It turned out great and my wife loved it. This will be a regular for us during grilling season.
