Chilled Cantaloupe Soup

Very cooling fruit soup that is provided. Excellent for lunches. If desired, add mint as a garnish.

Ingredients

  1. 1 cantaloupe – peeled, seeded and cubed
  2. 2 cups orange juice
  3. 1 tablespoon fresh lime juice
  4. ¼ teaspoon ground cinnamon

Instructions

  1. Peel, seed, and cube the cantaloupe.
  2. Place cantaloupe and 1/2 cup orange juice in a blender or food processor; cover, and process until smooth. Transfer to large bowl. Stir in lime juice, cinnamon, and remaining orange juice. Cover, and refrigerate for at least one hour. Garnish with mint if desired.

I have been inundated with cantaloupe from the garden and my husband suggested we make a chilled cantaloupe soup. I found this recipe and gave a go! It was a little bland, so the next time I made it, I doubled the cinnamon and gave it a shake of ginger and 2 tbs of honey. It was much better!

I made this for good friends, who loved it. So simple. I held back a bit on the orange juice since I didn’t know how many cups of cantaloupe were expected, and it was great at 1 1/2 cups of oj. I added a bit of salt.

I used a ninja…maybe I didn’t ‘process’ it enough, but it was still somewhat a little chunky. any suggestions? other than that, I love it. tastes great and definately really easy to make.

I really wanted to like this, but the consistency was strange… kind of like a thin slushy, and the flavor reminded me of an orange julius drink. It just didn’t seem like a soup at all.

Yum! My cantaloupe wasn’t very sweet so I added a bit of mango and a little bit of swerve sweetener. As a light summer snack, appetizer or dessert it’s perfect as is! For a meal, I mixed in some unflavored protein powder and topped with some unsweetened coconut flakes to boost the nutrition. Looking forward to using this recipe quite a bit this summer!

Welp, this sounded good and I followed the directions, but it did not taste good. Out of a family of five, I was the only one who dared to eat some. Everyone else took a taste and refused to eat more. The rest if getting poured down the drain. It’s an interesting idea, and maybe it would suit someone else, but we won’t be making this again.

This was super simple to make and yummy to eat . Since there is absolutely no heat involved, this is the perfect thing to whip up for a light dinner on a super hot summer day. And I love the fact that there is no added sugar.

I made this as written and it is a very tasty and refreshing soup or drink. It definitely needs to be chilled thoroughly so plan accordingly. I will make it again but will cube and freeze my cantaloupe the night before, add a touch of mint in the blender and serve it in a pretty glass with a mint spring on top! Nice for the summer.

This is a fab soup and was a big hit with dinner guests. However, I think it’s better with half the amount of orange juice, double the amount of lime and a generous amount of ginger (I used fresh and put it in the processor).

I added 1/3 cup of half and half to make it creamier. ohh, and I didn’t have a lime on hand, so I used the juice of half a lemon and also added 2 tbs. organic sugar. I thought it was a tasty and refreshing summer soup. yummmm

I made this with 1/2 cantaloupe, 1c orange juice, a small lime with a dash of cinnamon. Soup was a bit watery so i threw in a banana. I had some strawberries that needed eaten so I put 6 in as well. Turned out great after the additions!

A great way to use up cantaloupe. I used 3/4 cup of freshly squeezed orange juice and threw in a peeled orange. Pureed all the ingredients in my food processor for about 1 min, but I still thought the soup was too thick. So for those that thought the soup was too thin, adding some fresh orange segments definitely thickens it up!

I think this recipe has potential. I made it exactly as written an thought it had a bitter taste, but I used Tropicana orange juice and tht could have attributed to the bitterness because the cantaloupe was as sweet as could be. I loved the cinnamon, very nice touch. I’ll try again with a different brand of orange juice or a different juice all together, maybe a mango juice…

Best to use cantaloupe that was in the fridge. I had to add ice cubes to chill it quickly. Used Pine-Orange-Banana juice and it was great. I wish it was a little thicker… Maybe less blending next time or throw in a banana to thicken it. Suprisingly delicious!
