Ingredients
- 1 ½ cups couscous
- 3 cups chicken stock
- 1 tablespoon curry powder
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 tablespoons extra-virgin olive oil
- ½ cup raisins
- 1 bunch cilantro, chopped
- ½ cup slivered almonds, toasted
Instructions
- Pour couscous into a bowl. Mix chicken stock, curry powder, salt, pepper, olive oil, and raisins in a saucepan and bring to a boil; remove from heat. Pour the boiling liquid over the couscous. Seal the bowl with plastic wrap and allow to sit for 10 minutes. Fluff couscous with a fork. Top with cilantro and almonds.

We loved this recipe, but I only used half the suggested amount of salt, and substituted dried cranberries for the raisins.
Great easy recipe. Didn’t use the salt as I had low sodium broth and am a light salt user anyway. Didn’t have the cilantro so some thin sliced green onions did the trick. First time a side to Australian rack of lamb, second a Costco rotisserie chicken and air fryer asparagus! Endless possibilities.
I reduced the salt by more than half, and it was not missed. The chicken broth, which I measured out exactly, overpowered the dish, and did not mesh well with the sweetness of the raisins at all. This was the most bothersome aspect of the dish and the main reason why even the thought of eating it as leftovers made my stomach turn, though I was able to eat it when freshly made. The flavor provided by the curry powder was very one note. The cilantro and the almonds added almost nothing to the dish, overshadowed by the other aspects. I won’t be making this again, but if I did, I would reduce the chicken broth (or its concentration), or use a different broth, or even just use boiling water. I would also add other spices alongside the curry powder, or even ditch it altogether in favor of several individual Indian spices, perhaps including some garam masala. Even so, thank you for sharing! ^_^

I love this recipe so easy and delicious! I substituted dehydrated Parsley for Cilantro. I added dehydrated Red Onions. A dash of Cumin. I substituted 1/4 cup of dried Cranberries in place of Raisins. It was a hit!
We really loved this recipe. Made a few changes but was good as written. As suggested by other reviewers I added frozen peas, and chopped green onions. I used no sodium chicken broth and added salt to taste. I only had hot curry powder so added a little less but it was great and not too spicy. Along with the curry I added a some garam marsala for a little sweetness. We loved it!
Excellent and easy recipe. I changed raisins for dried cranberries that I boiled in the broth and spices. Has become a family favorite!!
Love this recipe! It’s not hard to make and I do it by hand. The only two things I’d change would be to reduce the sugar to 1/3 cup and use olive oil for the vegetable oil.

Easy is right and delicious! I made this as an accompaniment to Chef John’s Turkish Kebabs. Very nice. This is a simple couscous recipe but tastes like it took some time to make. Thank you for a great recipe. Just lovely.
This is a delicious recipe. I used golden raisins and 1 tsp of salt. I used Herb Ox chicken stock which already contains enough salt. The next time I make this dish, I’ll skip the added salt altogether.
I kept the raisins on the side for my younger eaters, but otherwise, this was a hit! And so easy!

This was a very nice couscous! This would’ve been four stars, but I deducted one for the salt content. It just needs about half the amount of salt it calls for (and we are salt lovers, so perhaps if you have a sensitivity to salt you should go with less). Just the right amount of curry. Do not omit the raisins; they add the perfect touch of sweetness! I added caramelized onions and it was excellent. Such a versatile dish; you can add any veggie you like.

Changed my mind from a 3 to 4 star. After letting it cool and eating it for leftovers the flavors got much more interesting. Turned out to be a nice dish!
Love this recipe. Very easy to add things to if you want to make it more of a full meal, like a can of chickpeas and some mixed frozen vegetables. Also, I feel like the amount of salt should be cut in half, or perhaps just a little more than half of what it calls for. It can be a little salty. I use vegetable broth because we are vegetarian.
