Ingredients
- 2 tablespoons butter
- 1 onion, chopped
- ¼ cup green bell pepper
- 1 medium head cabbage, cored and coarsely chopped
- ¼ cup water
- 1 clove garlic, crushed
- 2 sprigs fresh thyme
- 1 Scotch bonnet chile, seeded and thinly sliced
- salt and ground black pepper to taste
Instructions
- Melt butter in a skillet over medium-high heat. Add onion and bell pepper; cook and stir until slightly softened, 3 to 5 minutes. Add cabbage, water, garlic, and thyme; bring to a boil. Reduce heat to medium-low; cover and steam until cabbage is tender, 8 to 10 minutes.
- Stir in Scotch bonnet chile until warmed through; season with salt and pepper.
- For a less spicy dish, leave the Scotch bonnet chile pepper whole rather than chopping it.

Great side dish or main dish with some turkey kielbasa thrown in. I used Jalapeño Peppers instead of Bonnet Chile Pepper. Added some Louisiana hot sauce and bam! Flavorful, filling and still very low cal.
I changed this up a bit due to personal preference. We are not huge fans of cooked bell pepper and not only are scotch bonnets nearly impossible to find this time of year, they are just way too hot for us. So to kill two birds with one stone, I used a fresh jalapeno to replace the bell and also to add heat we are able to tolerate. It worked like a charm. This was good but I made two different cabbage recipes last night and the other came in favored due to one thing. Beer. Loved the heat in this one but I highly recommend replacing the water in this recipe for beer. It adds SO much flavor and really compliments the cabbage. Pre-shredded cabbage in a bag works fine and saves time but you’ll want to reduce the cook time. This is one I will make again but with beer.
