Ingredients
- 3 turkey drumsticks
- 3 quarts water
- 2 large onions, chopped
- 4 carrots, chopped
- 3 stalks celery, chopped
- 4 cloves garlic, chopped
- 1 tablespoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon ground dried sage
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon celery salt
- 2 cups uncooked egg noodles
Instructions
- Combine the turkey drumsticks and water in a large soup pot and bring to a boil. Stir in onions, carrots, celery, garlic, salt, black pepper, sage, thyme, rosemary, and celery salt; reduce heat to a simmer. Cook until the turkey meat is very tender, about 2 hours. Remove the turkey drumsticks and allow to cool. When cool enough to handle, strip the meat from the bones and tendons, chop the meat, and return to the soup.
- Fill a large pot with lightly salted water and bring to a rolling boil. Cook the egg noodles a boil until cooked through yet firm to the bite, about 5 minutes. Drain. Scoop noodles into soup bowls and fill the bowls with turkey soup.

Easy and delicious recipe. I make it with the whole turkey carcass every Thanksgiving, throwing in left over turkey scraps and pieces. I pretty much follow the recipe, making adjustments to my preferences. If I have any heavy cream or half and half I may add a third cup or so to mellow it out and give it a bit of creaminess. So good on a cold night.
I made this tonight. I had already made bone broth (which is a richer broth) with my turkey carcass, so it was just a matter of adding the vegetables, your spices, and the turkey pieces to it. I decided to saute the vegetables and the spices in olive oil before adding to the already-made bone broth. Your combination of spices is fantastic! Thanks for sharing! I’ll be saving this recipe for future use!
This worked for me with 3 fresh turkey legs which I cooked about 30 minutes before adding the veggies. After removing the cooked legs I added a pkg of dumplings & cooked them, adding more water when needed. The legs were fairly easy to clean, but some may not like to do that because there are quite a few bones, etc. I added a can of green beans right before finishing. Had some leftover Xmas banana bread with it. Got the legs for $.99/lb & had this as my ‘poor’ New Years Day meal. Steak & salmon the night before for the ‘rich’ NY Eve meal.
I used entire turkey carcass instead of drum sticks. If made again, would boil the turkey for an hour, remove meat , then add meat and rest of ingredients to the pot and simmer another hour.

I used the carcus from my Thanksgiving turkey. The only changes I made were to omit the celery salt (I didn’t have any) and added parsley. This soup was delicious. My husband raves about it. I will definitely make it again.
I roasted two turkey drumsticks and two turkey thighs. I didn’t care for how they came out. I decided that I would make a soup. So I made this in a round-about way. I removed a good amount of the skin. Then placed them in a pot of water with chopped onions, carrots and celery, along with the spices. I simmered for 1 hour. I strained it, and after the meat cooled cooled somewhat, removed it from the bones. After being in the fridge overnight, I skimmed off the thin layer of fat. For the soup, I added onions, celery and carrots to the strained broth. After coming to a boil, I let it simmer for about 35 min, then added the cooked drumstick meat and a handful of frozen peas. I let it simmer another 10 min or so. I also added a tblsp of corn starch mixed with a little water to thicken it a bit. This was SO MUCH BETTER than the plain, roasted drumsticks that I started with! Turkey meat has a lot of protein, too. It was fine without the noodles, but I have some leftovers so may try with it. I’m going to try a turkey salad with the leftover thighs. Thanks, and I highly recommend this!

Let me just say that this is one of the best soup recipes ever! I have made this several times and am just now writing this review. You can make this as is and it will be delicious. Since I am not one to waste anything, I used this recipe along with my Thanksgiving turkey carcass. I put the carcass and the drumsticks in an 8 quart stock pot, covered the contents with water and started the creation process. I pretty much doubled the spices and added additional veggies, but the outcome was fantastic. Since there are Keto dietary requirements in this household, I also cooked some collard greens using just broth from this soup and substituted the collard greens for the egg noodles. That was also a big hit. I am also a dad and I cook everything! Thanks for sharing this great recipe!

Loved this recipe. I would have given it FIVE stars except for the difficulty I had finding a three legged turkey.
I use rotisserie chicken instead of turkey, and triple the seasonings. (except for the salt and celery salt) Simmer for at least an hour.

Grew up on this soup! Always good warm meal in November. Modified the recipe too much to call it the same… None the less… it was veryhelpful and making my turkey scraps turn into Noodle Gold!!!
