I baked these brownies to take on a camping trip with my son’s Boy Scout group. I created these simple, delectable brownies using the basic concept of hot cocoa!

Ingredients
- 1 head cauliflower, broken into florets
- 1 white onion, diced
- 4 cloves garlic, minced, or more to taste
- ⅓ cup olive oil
- ¼ cup grated Parmesan cheese, or to taste
- ¼ cup grated Cheddar cheese, or to taste
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Combine cauliflower, onion, and garlic in a bowl. Add olive oil, Parmesan cheese, and Cheddar cheese and stir to coat. Arrange on the prepared baking sheet.
- Cook in the preheated oven until lightly browned, 35 to 45 minutes.

I cooked it a bit too long and some of my cauliflower pieces were too small – flavor was great though and I don’t mind it when it is charred. Next time I will only roast it about 30 minutes.
