Ingredients

  1. 4 eggs
  2. 3 tablespoons sour cream
  3. ½ cup shredded mozzarella cheese
  4. salt and pepper to taste
  5. 2 teaspoons butter
  6. 1 tablespoon minced fresh basil

Instructions

  1. Whisk eggs and sour cream in a bowl until creamy and smooth. Mix in cheese. Season with salt and pepper.
  2. Melt butter in a skillet over medium heat. Pour in egg mixture; cook, stirring constantly, until eggs reach the desired consistency. Mix in basil during final minutes of cooking.

I really like this recipe and will keep using it. I used fat-free sour cream and it turned out very well. I served it with lightly buttered toast and fresh fruit. What a great breakfast! But this could also be a quick fix for dinner!

I didn’t have any basil on hand, so I substituted Italian seasoning. It turned out to be an okay recipe with some degree of flavor. I’m not sure if I would make it again, but would make modifications if I do.

I made it for a breakfast group that i cook for. They enjoyed it and felt they were having a gourmet breakfast. I felt it was a bit bland, needed some punch. I will substitute parmesan cheese for some of the mozzarella. Probably will add garlic and maybe some italian seasonings.
