Ingredients

  1. 1 large egg
  2. 1 cup all-purpose flour
  3. 7 fluid ounces milk
  4. ⅓ cup chocolate chips
  5. ¼ cup vegetable oil
  6. 1 tablespoon white sugar
  7. 2 teaspoons baking powder
  8. ¼ teaspoon vanilla extract
  9. ⅛ teaspoon salt
  10. nonstick cooking spray

Instructions

  1. Beat egg in a large bowl with a hand mixer until fluffy. Add flour, milk, chocolate chips, oil, sugar, baking powder, vanilla extract, and salt; mix just until smooth.
  2. Spray a Belgian waffle iron with cooking spray and preheat according to manufacturer’s instructions.
  3. Pour about 3/4 cup batter onto the hot waffle iron and cook until golden brown. Repeat with remaining batter. Serve hot.

I have a Salton Belgium waffle maker that makes 2 waffles at a time so I used 1/3 c batter on each side and it took about 4 minutes. Quick and easy recipe.
