Blackberry and Blueberry Cobbler

This side dish, which is somewhat spicily and garlicky, goes well with most proteins. Since I prefer my vegetables slightly crunchy, I just cooked it for 10 minutes. Although this can be divided into numerous servings, I highly advise using one package each person.

Ingredients

  1. cooking spray
  2. 1 (6 ounce) container fresh blueberries
  3. 1 (6 ounce) container fresh blackberries
  4. ½ cup orange juice
  5. 3 tablespoons white sugar
  6. 1 cup all-purpose flour
  7. 1 ½ tablespoons baking powder
  8. 1 cup white sugar
  9. ½ cup butter, melted
  10. 1 egg
  11. 1 ½ tablespoons vanilla extract
  12. ½ cup miniature white chocolate chips (Optional)
  13. ½ cup brown sugar (Optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray an 8×8-inch baking dish with cooking spray.
  2. Stir blueberries, blackberries, orange juice, and 3 tablespoons white sugar together in a bowl. Allow berries to stand 20 to 30 minutes to accumulate juice.
  3. Whisk flour with baking powder in a bowl until thoroughly combined. Mix 1 cup sugar with melted butter, egg, and vanilla extract in a separate bowl until thoroughly combined. Whisk flour mixture gradually into the liquid ingredients to make a smooth batter.
  4. Spread a thin layer of batter over bottom of the prepared baking dish; top with berry mixture and juices. Spoon remaining batter over berries and spread into an even top layer; sprinkle top with white chocolate chips and brown sugar.
  5. Bake in the preheated oven until the cobbler is golden brown, the filling is bubbling, and the chips have melted, 30 to 35 minutes.

This is a pretty good cobbler. Like most other reviewers, I found it really really sweet (and that’s even with the reducing the amount of sugar). Both my husband and I also felt that the white chocolate chips just didn’t add anything to this–in fact, it detracted from the overall flavor. I think reducing the sugar amount drastically, leaving out the white chocolate chips, and maybe adding some lemon zest/juice to the fruit would make this more to our tastes. I also made the cobbler in 4 small ramekins instead of an 8×8″ pan, and they only needed to bake for 25 minutes. Doing it this way made for nice individual desserts to serve. Loved this recipe! I used blueberries, blackberries, and raspberries. Also, I didn’t have any white chocolate chips so I crushed up pecans and mixed them with the brown sugar for the topping. It was a great recipe and I’ve already made it twice in 1 week.

Raised in the south, I have eating a lot of cobblers. This was a wonderful introduction to adding blueberries. I did leave out the brown suger but added the white chocolate. Would serve to my mother in law

I thought this would be great, but I was disappointed. As others have said, with the white chocolate chips and the brown sugar, it’s just way too sweet. After 35 minutes in the oven, the cake batter was still batter. It sounded so promising.

DH loved it and declared it one of the best ever. Me, not so much. I thought it was way sweet and I didn’t add the choc chips or brown sugar. If the blackberries had been more sour it might not have been so bad. The bottom was gooey and unappealing too. Oh well. I’ll probably make it again to keep my sweetie happy.

This is a very good cobbler. The crust is excellent, sweet and crunchy on top and moist on the bottom. Its very similar to shortbread, not the “biscuit- like” crust. This is much better. I didn’t make any changes except soaked berries a bit longer.

This was really good! We went blackberry picking and I needed to use them up along with some blueberries that had been sitting in the fridge, so I tried it out. Quick and easy to make and the kids had fun with it too. We didn’t use the chocolate chips and it came out sweet and crunchy on top 🙂
