This dish would go well with any fall meal, including Thanksgiving. The potatoes and squash’s sweetness together make for a tasty meal. Any other chicken sausage will work in this recipe; I use apple Gouda chicken sausages from Costco®. The ingredients for this recipe were initially leftovers in the fridge that needed to be prepared. Now that everyone loves it, it has become a staple in our house.

Ingredients
- 1 butternut squash, halved and seeded
- 2 sweet potatoes, halved lengthwise
- 2 ¾ cups water
- ¼ teaspoon salt
- 1 ½ cups whole grain couscous
- 5 links precooked apple chicken sausage, sliced into rounds
- 1 green bell pepper, diced
- ½ cup diced green onion
- 1 (12 ounce) package shredded mozzarella cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Place butternut squash and sweet potatoes cut-side down on the baking sheet.
- Bake in the preheated oven until softened, about 30 minutes. Cool until easily handled, 5 to 10 minutes. Scoop flesh out of the skins; place in a 9×13-inch casserole dish.
- Bring water and salt to a boil in a small saucepan. Stir in couscous; simmer over medium-high heat until couscous is soft, about 5 minutes. Drain excess water.
- Stir couscous, sausage, green bell pepper, and green onion into the casserole dish. Sprinkle mozzarella cheese on top. Cover casserole dish tightly with aluminum foil.
- Bake in the preheated oven until hot and bubbly, 30 to 40 minutes.
- Rice or egg noodles can be substituted for couscous.
- Omit the chicken sausage and you have a great vegetarian dish!

Oops. More info here. Other than lack of directions, there is also lack of flavor. Pepper, sausage, couscous, onion, salt, squash all quite bland both alone and in this. So, a really good bland mix of a couple things and kind of mealy texture with couscous and squash. That’s how it hit my pallet. The sausage was good, and would be fine alone but that’s just a heat-up item from the store
I liked the recipe, although I felt like it could more creamy. I used this recipe for chicken sausage: : https://www.tasteofhome.com/recipes/chicken-sausage-patties. And I only had quinoa. But i still liked it
Tasty recipe… just need a couple of tweaks for my taste. I would recommend cooking the sausage first on the stovetop along with the green peppers. The green peppers, even though a small dice really never got tender and the sausage texture would benefit from some browning I think.. and would add some flavor.
