Kay’s Gluten-Free Banana Date Bread

Granola bars that are fresh from your own oven are crunchy, chewy, and chocolaty! Why pay for packaged, subpar food that contains trash and unidentified ingredients? These are made with chocolate and coconut, two of my favorite ingredients. It’s simple to alter this recipe and replace the ingredients with your preferred ones.

Ingredients

  1. cooking spray
  2. 3 ripe bananas
  3. ½ cup white sugar
  4. ⅔ cup cinnamon-flavored applesauce
  5. 3 eggs
  6. 1 teaspoon baking soda
  7. 1 teaspoon baking powder
  8. 2 ¼ cups gluten-free all purpose baking flour (such as Krusteazl®)
  9. ⅔ cup chopped dates
  10. ¾ cup chopped walnuts (Optional)

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Spray a 9×9-inch baking dish with cooking spray (do not use a loaf pan).
  2. Mash bananas in a bowl. Add sugar and applesauce and mix well. Mix in eggs, baking soda, and baking powder. Add flour 2 tablespoons at a time. Fold in dates and walnuts. Pour batter into the prepared baking dish.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 60 minutes. Cool on a wire rack for 5 minutes.
