Everyone enjoys cake! Sweet and fluffy. Now, add some flair to a basic cake mix by making bars out of them. You are welcome to frost the bars.

Ingredients

  1. 1 (18.25 ounce) package yellow cake mix
  2. ½ cup butter, melted
  3. ½ cup packed brown sugar
  4. 2 eggs
  5. ½ cup peanuts
  6. ⅓ cup English toffee bits
  7. ½ cup chocolate chips
  8. ½ cup butterscotch chips
  9. ⅓ cup shredded coconut, or to taste (Optional)
  10. 1 (16 ounce) package prepared chocolate frosting (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine cake mix, butter, brown sugar, and eggs in a bowl. Beat with an electric mixer, scraping bowl occasionally, until well mixed. Stir in peanuts and toffee; spread into an ungreased 9×13-inch baking pan. Sprinkle chocolate chips, butterscotch chips, and coconut on top.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool on a wire rack and coat with frosting. Cut into squares.
  4. Use any cake mix and frosting you prefer.
  5. Almonds, cashews, or pecans can be substituted for the peanuts, if desired.
  6. White chocolate chips can be substituted for the butterscotch chips, if desired.

This is a good, quick bar cookie mix. They are too sweet for me though. I left off the frosting. Just the toffee bits and nuts would have been plenty for me. I mixed the chips in the batter as I figured we’d like them better that way. My husband has a big sweet tooth, so I’m sure he will love these.
