These Yorkies are fantastic! Also really simple! Given that this recipe calls for meat drippings, serve Yorkshire pudding with roast beef or pork.

Ingredients

  1. cooking spray
  2. 1 large onion, chopped
  3. 1 green bell pepper, chopped
  4. 2 garlic cloves, chopped
  5. 6 stalks celery, chopped
  6. 1 teaspoon Italian seasoning
  7. ½ teaspoon chili powder
  8. ½ teaspoon dried parsley
  9. ¼ teaspoon garlic powder (Optional)
  10. salt and ground black pepper to taste
  11. ½ (15 ounce) can sliced carrots, drained
  12. ½ (15 ounce) can sliced potatoes, drained
  13. ½ (15 ounce) can green beans, drained
  14. ½ (11 ounce) can canned corn (such as Green Giant Niblets®), drained
  15. 2 (14.5 ounce) cans chicken broth
  16. 5 ½ cups water
  17. 2 cups tomato puree
  18. ¼ cup grated Parmesan cheese

Instructions

  1. Spray a large soup pot with cooking spray, and place over medium heat. Cook the onions, green pepper, garlic, and celery until the onions are translucent, stirring often, about 5 minutes; mix in the Italian seasoning, chili powder, dried parsley, garlic powder, salt and black pepper. Stir in the carrots, potatoes, green beans, and corn, mixing the vegetables with the seasonings, and add chicken broth and water.
  2. Bring the soup to a boil, and add tomato puree and Parmesan cheese; return to a boil, lower heat to a simmer, and cook until the green peppers, onions, and celery are tender, about 15 more minutes.

This soup has potential, but there is way too much water and not enough spices. I used crushed tomatoes because my store didn’t have puree, and I used a 28 oz can. I only used 2½ cups of water and added an extra cup of broth, plus I doubled the spices and doubled the cheese. I didn’t have carrots, but I used a whole can each of green beans, potatoes and corn. It was really good with changes. It would be rather bland as written.
