My favorite homemade summer beverage (as well as winter, spring, and fall) is this cream soda. Any flavor may be used, and the quantities may be changed to suit your preferences. Enjoy!

Ingredients

  1. ½ cup mayonnaise
  2. ½ cup crumbled feta cheese
  3. 1 tablespoon chopped fresh chives
  4. 1 tablespoon chopped fresh dill
  5. 1 tablespoon fresh lemon juice
  6. ¼ teaspoon salt
  7. ¼ teaspoon ground black pepper
  8. 1 bunch radishes, diced
  9. 1 pint cherry tomatoes, quartered
  10. 1 large English cucumber, diced
  11. ¼ medium red onion, chopped

Instructions

  1. Combine mayonnaise, feta, chives, dill, lemon juice, salt, and pepper in a large bowl. Add radishes, tomatoes, cucumber, and onion and toss together.

Had some fresh dill in the fridge, but I found it was beyond its prime, so I added dried dill weed. I had a few black olives left, so I sliced them and added, as well. I used multi-colored grape tomatoes which gave this some colorful eye appeal. I love feta and was concerned that it would be crushed combining it with the dressing ingredients. I added it along with the veggies and tossed gently. The one thing that I didn’t care for in this salad is how “wet” it is. Made this early in the day and refrigerated, and although it already was pretty runny, the juice from the tomatoes thinned it out even more. Still was refreshing, and a good side dish to some Dungeness crab legs.

I love this recipe exactly as it is! Everyone agrees that this is so much like the Wnedy’s greek pita in the 90’s. I eat it with a fork, in a pita, on spinach, with crackers .

This was a hit with everyone. Very easy to make. Recommend taking the time for a fine dice and use the juice of 1 whole lemon, and if you like a little more crunchy add 2-3 ribs finely diced celery. Asked for the recipe every time I make it.

I am exhausted! After working an 8 hour shift being on my feet all day I thought I could come home and whip this right up. I even used my food processor to dice. Ingredients are good, but flavor was not.. If I do this again I will just pour my favorite Italian dressing over and let it marinade.

would not know chives from an english cucumber, but cut up some generic grocery cucumbers, some spring onions with their green stems, some radishes and threw in some crumbly cheese (goat I think) added some spices/herbs, and it was all good. No left overs. Looks as if spring has finally arrived. Thanks for the recipe BTW, this goes really good with some white wine.

I love this SUMMER salad / side dish because it pairs well with everything! I added a little TAJIN or chile seasoning to give it a little kick.

This is fresh and flavorful. Great as is. 5 stars. FYI, this is very easy to change-up. I also like it with goat cheese. But since I’m focusing on healthy eating, I cut out the cheese and added a couple of ounces of wild salmon for protein. Served as dinner entree. Delicious.

The only thing I do not care much for is feta cheese, otherwise I may have used a little too much fresh lemon juice. But I will adjust when I make it again. I do like it.
