Ingredients
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 bunch green onions, finely chopped (white parts only)
- 4 eggs, beaten
- 1 (16 ounce) package cottage cheese
- 2 cups shredded Cheddar cheese
- ¼ cup crushed croutons
Instructions
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch pie or quiche pan.
- Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in green onions, eggs, cottage cheese and Cheddar cheese. Pour mixture into prepared pan.
- Bake uncovered in preheated oven for 45 minutes. Remove from oven and sprinkle with crushed croutons. Return to oven and bake for an additional 15 minutes, until eggs are set.

This is the only way I can get my family to eat spinach, they love this quiche! We added a can of chopped artichokes and it was so yummy!!
This recipe is the best. I have made it multiple times and it is a part of the family favorites. I did find this recipe in a cookbook about 30 years ago but lost the cookbook and could not remember the exact measures even though I had made it hundreds of times. I do remember the other recipe had flour and butter but honestly it does not need it. I make this recipe but add garlic powder and it is a big hit. No difference in taste or texture from the original one I made years ago. I admit I do not use breadcrumbs or croutons – no need. Thanks for posting this wonderful recipe.
Loved this! Wonderful crustless quiche. I made changes but the review didn’t get saved somehow. Don’t recall all of them, but what I do recall: 1. Next time I’ll leave off the croutons. I used gf breadcrumbs and they seemed pointless. 2. I used fresh, whole spinach 3. I added fresh basil (chopped) inside 4. I put fresh basil on the top about halfway through cooking 5. I used 2 oz crumbled blue cheese rather than cheddar 6. I added red chili flake 7. Cooking time was much longer for me than indicated on recipe. My oven tends to need longer cook times, and I used a greased glass pie dish. I cooked 90-120 minutes before the middle was solid, and although the edge had pulled away from the pan by that point it was wonderfully crispy without being dry. I’ll make this again!
Fabulous and so easy to make. I added turkey sausage to the mix and rather than using croutons I used crushed melba toast.

Very tasty. Make sure you really squeeze all the water out of the spinach. I thought I’d been thorough but there was still a little liquid in the bottom of the dish. I used crumbled ritz crackers instead of croutons. You probably don’t need either. Definitely let it rest for 10 minutes or so before serving.
Was better the next day and topped with sour cream.

This is so good! I’ve made it several times and it’s always a hit. It’s good as written, but is also a great base recipe you can customize however you like. At different times, I’ve added red bell peppers, garlic, sausage, bacon, and sliced tomatoes in top and made it with and without spinach and crackers. I have loved every version. I will never need another quiche recipe.
This is my first quiche and WOW! The entire family loved it!! I have always been a little intimidated by the word quiche, lol, so I never tried! But it was a dream to make! And tasted amazing!!
I have made it a few times and I love! I make it with a pre made pie crust and added bacon.
This is a regular meal in our house. I make it for breakfast and then we have leftover the next day’s breakfast. You can use any vegetable that you have on hand or add a different cheese as it is very forgiving.
I substituted onion powder for the green onions and added a little salt, ground white pepper, garlic powder and crumbled bacon. My family love it!

Amazing! I had some spinach and other veges I needed to use. Diced onion, bell pepper, fennel, spinach. Diced ham. I added 6 eggs because of the extra filling. I sauteed the veges first. The cottage cheese was excellent! The texture of the quiche was perfect! I added some French herb blend that I like to use. Will definitely make again!
I used feta cheese instead of the cheddar cheese. I loved it
ITT was excellent! I was out of white shredded cheddar cheese do I dived 1/2 cup of smoked Gouda & I used ricotta cheese instead of cottage & everyone raves about it! I’m making it again to bring to a Christmas party next week!
The only thing I did is put less of all the cheese in it, for diet and health’s sake! Ha! It is a fantastic recipe and a great mix of flavors. Thank you All Recipe; you always come through with the best food… gourmet!.
I pre-baked the pie shell for 15 minutes at 400 degree’s then added the filling. Turned out very good!
OK. NOt sure I’d make it again. More like scrambled eggs with spinach.
