Ingredients
- 2 tablespoons olive oil
- 1 cup diced onion
- ½ cup diced green bell pepper
- ½ cup diced celery
- 1 ½ teaspoons chopped garlic
- 1 cup converted long-grain white rice
- 4 ounces smoked sausage, cut into slices
- 4 ounces cooked ham, cut into bite-size pieces
- 2 (10 ounce) cans diced tomatoes with green chile peppers
- 1 cup chicken broth
- ¼ teaspoon dried thyme
- 1 bay leaf
- 2 (15 ounce) cans ranch-style beans, undrained
Instructions
- Heat oil in a large saucepan over medium heat. Sauté onion, green pepper, and celery until onions are soft and translucent. Stir in garlic, and cook another minute. Add rice, sausage, and ham. Cook 2 to 3 minutes, to coat rice with oil, frequently stirring. Pour in tomatoes with green chiles and chicken broth. Season with thyme and bay leaf. Bring to a boil, then reduce heat. Cover and simmer, 20 to 25 minutes or until liquid is absorbed. Stir in beans, mix well, and heat through.

Made this as written, and also expanded to feed 150 (with a couple of tweaks because of sheer quantitiy). I loved it, family loved it, got rave reviews from the crowd. Had no problem understanding what ranch style beans were.
I substituted red beans instead and instead of ham I used chicken and salad shrimp
Used this as the starting idea. Just took what I had in the fridge. Ham, sausage grilled, cob corn, red peppers, rice black beans. Stewed it all together the same way.
It took me two nights to make this because I wanted to make it as close to the recipe as possible. I thought I had everything before I started but found out half way through that I only had enough powdered bullion to make one cup and I was making the recipe X-4. I subbed the rest of the bullion with one C vegetable and two C beef bullion. I am certain that it would have been perfect as per the recipe but this was awesome. This is a go to, flavorful and filling meal that is excellent for a bunch of guys that have been working hard all day, or even a family sit down after a long day at the office, job site, or school. I would recommend this recipe for anyone who love a good heart warming meal.
This is delicious! Needs a bit more rice and a big chunk of cornbread. Good eats!
I tweaked this recipe quite a bit to accommodate what I had on hand. I used beef sausage with no casing, no ham, and only one can of Rotel. I also used beef broth instead of chicken, orange pepper instead of green, and Mahatma yellow rice. The rest was exactly the same as the recipe suggested. It was very colorful, tasty and hearty. Will definitely make this again and glad I found the recipe.
I did not have green pepper or celery each time I made this, 3 times. But, I had everything else and one time I used H EB hatch Chile sausage and I had some left over Chicken ticklers, which has a jalapeno with a chicken breast wrapped around it and bacon wrapped around that I just diced all the leftovers and added either HEB jalapeno or hatch sausage. I used 2 cans of Ranch Style beans, 1 can of spicy Rotel and one can of diced green chilis. I added one package of jambalaya rice and seasoning with one cup of rice and 1.5 cups chicken broth. Yeah lots of tweaks here and there but an awesome base! We love it and it’s in my favorite recipes. Serve with cheese biscuits or cornbread
Made this for dinner tonight and the family loved it. My wife asked me to make it again “real soon”. I added a half cup of frozen corn and it worked into the flavor nicely. The only substitution I will make in the future is to go with one can of ranch beans and one can of pinto beans. (The recipe as is, the ranch beans kind of over powered everything else flavor wise.)
Threw this together with what I had in the kitchen, added a little cayenne and chili pepper. My whole family loved it! Even my chef husband was mmmmmming the whole time!
I love it. Followed recipe. Only think that might have changed is the sausage. We use reindeer spicy sausage a majority of the time in our cooking. Also substituted shrimp for ham, only because I don’t like the taste of ham.

Used kielbasa sausage and added Cajun seasoning plus 1 can hot rotel and 1 can original rotel. Just yummy!
Really enjoyed the Texas twist to this recipie. I only added one can of beans and I had some left over chicken I shredded and added.

I have made this recipe more than once. My family loves it. I have substituted chicken breast when I didn’t have ham and added small deveined shrimp. Also I use 1 can of diced tomatoes and 1 can of diced tomatoes with green Chile’s so it’s not quite as spicy for my husband and grand kids. Use double the chicken broth and only 1 can of beans. It has been a success every time!!
The only thing I changed was adding some extra onion, I had red pepper instead of green and one less can of beans… Exceptional!! Everyone loved it including my 6 and 3 year old… plus they had to eat their food in order to get honey cornbread…
WOW! Had to make it twice in the same week because the first batch was gone in an hour! I added a little more of the sausage and ham and skipped the beans, but that’s just personal preference. 10/10 would make again
I subbed shredded chicken for the ham and left out the celery. I threw in some cooked shrimp at the end and added more broth. It was awesome!!! Lisa
This is very good! The only thing I did different is cut the beans down to one can Everything else I followed. The rotel was plenty of spice. But some tabasco sauce would be fine if you wanted more heat. This will be one of my “Tried and True” recipes.
Don’t use the beans but other than that a great recipe!! Cook it often and the family loves it.
This was a great and easy variation on the Cajun standard. I followed the recipe pretty closely, except I used the entire smoked sausage and the entire 8-ounce ham steak. My wife and son both agreed this belongs in the rotation.
