Ingredients

  1. ⅔ cup chopped onion
  2. ½ cup chopped red bell pepper
  3. ⅓ cup chopped green chile pepper
  4. 2 tablespoons minced garlic
  5. 1 jalapeno pepper, seeded and diced
  6. 1 tablespoon margarine
  7. 3 cups vegetable broth
  8. 2 cups peeled and cubed potatoes
  9. 1 teaspoon ground cumin
  10. ½ teaspoon salt
  11. ⅛ teaspoon ground black pepper
  12. ⅛ teaspoon ground red pepper
  13. 2 cups cheese tortellini
  14. 2 tablespoons all-purpose flour
  15. 2 tablespoons vegetable oil
  16. 1 (15 ounce) can whole kernel corn, drained
  17. 1 pint half-and-half cream

Instructions

  1. In a large pot over medium heat, cook onion, bell pepper, chile pepper, garlic and jalapeno in margarine until tender but not brown, 5 minutes.
  2. Stir in broth, potatoes, cumin, salt, pepper and red pepper. Bring to a boil, then reduce heat and simmer about 20 minutes, until potatoes are just tender.
  3. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
  4. In a small bowl, stir together flour and vegetable oil. Pour into soup, increase heat to medium, and cook until thickened and bubbly. Stir in corn, half-and-half and tortellini and heat through. Serve.

This has been a favorite of mine for years now. The only thing I change is add more of the seasonings listed, it is definitely bland if you use the exact amount. Lots more salt, pepper, cumin, and red pepper! Otherwise this soup is fantastic, everyone I make it for loves it!!

Surprisingly tasty- I did use a sweet potato as it’s what I had on hand, and I think it was a good choice (Id do it again!)

Fantastic soup with just the right amount of heat – I’d describe it as just a touch less spicy than most “medium” salsas. 4 out of 5 of us devoured it, the fifth wouldn’t even try it because he could see the peppers floating in it. Kids. Ugh. The conversation at dinner included me saying that next time I make it I might prefer to double the potatoes and not include the tortellini. My husband and kids all vetoed that and said they love having the tortellini in it.

Nice job, Silverwolf! I followed the recipe and the result was great! My kids tend to groan when they find out I’ve made a new recipe. This time they wandered over to the stove and announced that it looked “interesting” and “weird.” But when they tasted it they were pleasantly surprised and said it was “actually pretty good” (a glowing review coming from my kids!). Hubby and I both loved it too. I skipped the cilantro garnish and served with French bread instead of chips. We’ll definitely make this one again!

This was pretty good, but I made a few changes, to save prep time and clean up. I did not peel my potatoes, and I didn’t cook the tortellini separately, just added them in about halfway through the potatoes’ cook time. I also added a good pinch of salt at the end because I tasted it and it needed ‘waking up’.

We used cauliflower instead of potatoes and spinach tortellini. Also about 1/2pt of half/half instead of a whole pint. Yum! My jalapeno pepper was rather hot so only used a bit of it for the pot but a little bit more for the grownups.

I left out the green chili pepper (my grocer didn’t have it) and the red pepper because one of my boys is only 5 years old. Everyone loved it including my die hard steak eating husband.

Nice chowder, easy to make. Threw in some leftover cooked chicken. And cooked tortellini in pot with potatoes.
