This dish is incredibly quick and easy to make, and it yields wonderful results! For flavor, some chicken is added to the rice cooker along with some crushed garlic. The end result is delicious, intensely fragrant garlic rice. Even great when combined with some chicken!

Cook Time: 16 mins
Total Time: 36 mins
Servings: 4
Yield: 4 chicken breasts

Ingredients

  1. 1 (10 ounce) package frozen chopped spinach
  2. 1 tablespoon water
  3. ⅔ cup grated Parmesan cheese
  4. ½ cup olive oil
  5. ⅓ cup chopped fresh parsley
  6. 2 cloves garlic, minced
  7. 1 tablespoon basil
  8. ¼ teaspoon salt, or more to taste
  9. ground black pepper to taste
  10. 4 skinless, boneless chicken breasts
  11. salt and ground black pepper to taste
  12. 4 slices Monterey Jack cheese, cut into strips
  13. ¼ cup melted butter
  14. ¼ cup seasoned bread crumbs

Instructions

  1. Place frozen chopped spinach in microwave-safe bowl with water. Cook in microwave until hot, 6 to 7 minutes; cool until easily handled. Squeeze spinach to extract liquid. Combine spinach, Parmesan cheese, olive oil, parsley, garlic, basil, 1/4 teaspoon salt, and pepper in the bowl of a food processor; puree until smooth.
  2. Place each chicken breast between 2 pieces of plastic wrap; pound each breast using a meat mallet until flattened. Remove plastic wrap; sprinkle breasts with salt and pepper. Spread spinach mixture on each breast, top with Monterey Jack cheese strips, roll chicken, and secure with toothpicks. Dip each chicken roll in melted butter; coat thoroughly with bread crumbs. Place chicken rolls side by side in an 8-inch microwave-safe baking dish with seam-side down. Cover dish with plastic wrap, leaving 1/2 inch of one side uncovered to vent steam.
  3. Cook chicken rolls in microwave until juices run clear and chicken is firm to the touch, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  4. Use more or less chicken, depending on the amount of filling you want to include in each roll.
  5. A blender can be used in place of a food processor to make the pesto.
  6. Your favorite cheese can be substituted for Monterey Jack.

I mixed premade pesto with the spinach. I also baked at 350 for 40 mins. I also find rolling chicken very difficult so I placed the mixture between two pounded chicken thighs and it turned out very well.

My daughter loved this. She said this is amazing, definitely 5 stars. The center is creamy and delicious. I hate microwaved food so I baked it at 375 for 30 minutes. It came out perfect. Everyone requested I make this again.
