greatest tacos ever! Refried beans are put on top of a soft shell taco, which is then encased in a hard shell taco that has seasoned ground beef inside and is topped with cheese, lettuce, tomato, onion, sour cream, and fresh guacamole. You can top it with anything you want, but I suggest packing it full! Also, if you don’t eat meat, top the soft shell with melted cheese and the firm shell with refried beans.

Ingredients

  1. 1 pound ground beef
  2. 1 (1 ounce) packet taco seasoning mix, divided
  3. 1 (16 ounce) can refried beans
  4. ⅔ cup water
  5. 12 prepared crisp taco shells
  6. 2 avocados
  7. 1 tablespoon sour cream
  8. 1 fresh lime, juiced
  9. salt and black pepper to taste
  10. 12 (7 inch) flour tortillas
  11. 2 cups shredded Cheddar cheese
  12. 1 cup shredded lettuce
  13. 1 large tomato, chopped
  14. ¼ red onion, chopped
  15. ½ cup sour cream

Instructions

  1. Place the ground beef in a skillet over medium heat, and sprinkle about 3/4 of the packet of taco seasoning over the meat. Cook and stir the ground beef, breaking it up as it cooks, until the beef is browned and crumbly, 10 to 15 minutes. Drain the excess grease.
  2. Mash the refried beans with the water in a small saucepan, and sprinkle with the rest of the seasoning packet. Heat the refried beans over low heat until simmering.
  3. Preheat oven to 300 degrees F (150 degrees C). Place the crisp taco shells on a baking sheet, and warm them in the preheated oven for 3 to 5 minutes.
  4. To make the guacamole, peel, seed, and mash the avocados in a bowl with 1 tablespoon of sour cream, the lime juice, and salt and pepper to taste, and set aside.
  5. To build the tacos, spread each flour tortilla with about 2 tablespoons of heated refried beans. Wrap the tortilla gently around a crisp tortilla shell. Spread about 2 tablespoons of ground beef along the bottom of the crisp shell, and sprinkle about 2 tablespoons of shredded Cheddar cheese on top of the meat. Top the cheese with shredded lettuce, a sprinkle of chopped tomato and onion, and a dollop of sour cream and guacamole.
  6. This recipe appeared in Allrecipes Magazine and was modified to use nacho cheese dip in place of shredded Cheddar cheese.

This is a great taco recipe. I would never have thought to adding the soft shell that is spread with refried beans around the hard shell. This was a huge hit in this home!

I make my own refried BLACK beans using peanut oil, and have my own quacamole recipe plus don’t use the taco seasoning because being 100% spaniard we’ve got our own way of seasonsoning. Still for someone who isn’t familiar with hispanic cooking this recipe is perfect.

If you’re looking for an authentic taco recipe, keep moving. If you’re looking for a really tasty meal or if you’re like us and don’t eat fast food much anymore but sometimes miss the flavors, you can’t go wrong with this. We both thought these were great. My only change was to only use 1/3 c of water in the beans because it seemed like enough. Next time I might not add any. Great recipe, thanks!

I left out the onion, personal preference. And, I bought the hard shells in a package that came with sauce & seasoning. Don’t do that! The shells were too small and the seasoning was way too salty. Otherwise, this is one of the best recipes I have made from the Allrecipes website, a must try!

This recipe was so disgusting it tasted good. Its like a double negative makes a positive, but the negatives were both in one food. I’m positive there weren’t any positives, but it still was positively delicious. Wow

It was a bit labor intensive. When I ate the leftovers, I ate the refried beans on the side and did one hard shell. I also didn’t make the guacamole. I cut up avocados and put them on top. Save yourself calories and use plain greek yogurt instead of sour cream!

Why do you add water to the can of refried beans? This created a soup. Then when you put this soupy mixture around the hard taco it turns it into a soft taco within minutes. What a waste of calories. I did like the guac though. I like sour cream in my avocado.

Instead of of pkg taco seasoning, I used “Taco Seasoning I” from this site, adding about 1-1/2 TBSP to the meat and did not add any seasoning to the beans. Unfortunately, the guacamole sauce lacks flavor. I added additional sour cream and seasonings, but it’s just a garnish and isn’t necessary unless you really like guacamole. I can’t say enough about these. They are so easy to eat without making a mess.
