Chicken Teriyaki with Asparagus

Ingredients

  1. ¾ cup honey teriyaki sauce
  2. ¼ cup white wine
  3. 4 skinless, boneless chicken breast halves
  4. 16 spears fresh asparagus
  5. 4 slices Swiss cheese

Instructions

  1. In a large bowl, mix the honey teriyaki sauce and wine. Place chicken in the bowl, and coat with the marinade. Cover, and marinate in the refrigerator at least 1 hour (it is best if you can marinate overnight).
  2. Preheat oven to 375 degrees F (190 degrees C).
  3. Discard marinade, and arrange chicken breasts in a baking dish. Bake 15 minutes in the preheated oven, until almost done.
  4. Place the asparagus in a pot fitted with a steamer basket over 1 inch of boiling water, and steam 5 minutes, until tender.
  5. Place 4 asparagus spears on each chicken breast, and top each breast with a slice of Swiss cheese. Return to oven, and continue baking 10 minutes, or until cheese is melted and chicken juices run clear.

I marinated over night…the chicken breasts were dry and just terrible. I’m not sure how it would have been, but I definitely won’t make this again.

This was easy and really good just made a few changes. I used lite soy sauce added apricot preserves to make teriyaki added fresh garlic and used provolone cheese instead of Swiss.

I was intrigued by the interesting mix of ingredients, but unfortunately this was just ok for me. The chicken comes out very bland, so I highly recommended seasoning the chicken with salt and pepper in the very least, after removing it from the marinade. You don’t taste any wine at all, so either add more, or leave it out completely. Steaming the asparagus is an unnecessary step, as 25 minutes in the oven is long enough for it to cook. Instead of putting the cheese on for the last 10 minutes (this would be too long and the cheese would melt off), I add it in the last 3 minutes. Some tweaks are needed here if I were to make it again. An idea would also be to reduce the marinade down on the stove, and use it as a dipping sauce.

i wanted chicken, made easy. this is very good. i,had to add a couple tablespoons of honey and sub. low-sodium chicken stock for the wine. the cooking technique was concerning…but i follwed the directions even though my breasts were huge. i cooked maybe 2 1/2 miutes longer at the steps. i had left-over swiss cheese for ham sandwiches after christmas, so i used maybe 6-7 slices of paper-thin swiss on top. glad i did! i used alumininm foil, sprayed with pam for easy clean-up. the breasts marinated about 6 hours. very easy, gormet looking meal. i served with asaigo/mozzeralla egg noodles and sweet cherry tomatos soaked in italian seasonings and basil. if you love terrayaki ckicken, swiss cheese and asparagus…try this!

Delicious, and easy. I prefer it a little more done, so I gave it an additional 15 minutes baking time before adding the asparagus and cheese. Also sprinkling garlic on before baking added an extra zip. Served with sticky rice and enjoyed it.

Loved it. Followed directions except at end, turned on broiler to golden the cheese and asparagus so as not to dry out the chicken by cooking it too long.

Wonderful. I think perhaps I overcooked the asparagus a bit, but everyone loved the combination of flavors! Also I only had cheddar instead of swiss….never missed it…still great!

I love, love, love this dish! It’s so simple and delicious. I used green beans last night and was just as good! Make sure you poke holes in the chicken before your pour marinade over it, really gives it good flavor!

This was so easy, and looks so fancy. DH loves asparagus, and was estatic with this recipe. All the flavors blended well together. I think it needed a bit more flavor. I will season the chicken with some garlic next time.

This was so simple and quick, but VERY tasty. I used Havarti instead of Swiss because of my husband’s preferences. I also only had Teriaki so I added honey to the marinade. It was very moist and a good combination of flavors. Kids ate it up too! Will definatly make again!

Good recipe – easy and tastes good! Chicken came out nice and moist. I didn’t have honey teriyaki sauce so I just added 2T of honey to the marinade instead. Will make this one again.
