Mom’s Applesauce Pancakes

Ingredients

  1. 2 cups dry pancake mix
  2. 1 teaspoon ground cinnamon
  3. 2 large eggs
  4. 1 cup applesauce
  5. 1 teaspoon lemon juice
  6. ½ cup milk

Instructions

  1. Stir pancake mix and cinnamon together in a large bowl; make a well in the center and add eggs, applesauce, lemon juice and milk. Stir mixture until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, 1 to 2 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.

These were pretty darned good. I took advice of other reviewers and bought a mix that wasn’t “complete only add water” and went for one that required other ingredients. I bought chunky applesauce and would definitely recommend doing this. Those soft chunks of apple in the pancake were awesome. My pancakes were very fluffy and light. Definitely could taste applesauce but it wasn’t strong. Was told by family to make them again.

Not nearly enough apple flavor, and the texture was more dense than I would have liked. The batter was EXTREMELY thick, and I added a lot more milk (more than double) to reach the consistency that I know works on pancakes. I’m always looking for something new when it comes to food, but unfortunately, I won’t be making these again. They were simply OK, not that that’s a bad thing, either, but I have other pancake recipes that I like better.

Not a pancake eater but these were pretty good. Didn’t eat a full serving – just too filling. Applesauce was unsweetened so a little powdered sugar may fix that. I liked better with dried cranberries added. Going to try putting in the freezer.

My husband and I really enjoyed these pancakes! They turned out fluffy, browned beautifully, and were delicious. I made half the recipe and it made 6 pancakes. I used Kodiak Power Pancake Mix (it’s whole grain and high protein so needs help to be fluffy) and used buttermilk instead of the milk and lemon juice. I added maybe 2 extra tablespoons applesauce and more buttermilk – didn’t measure, just poured in small amounts till batter reached the right consistency. So easy to make! This one’s a keeper! Would good server with strawberries, blueberries or other fruit along with the usual butter and syrup.

I’m giving this 5 stars because my 6 year old LOVES them. I only had half a lemon so I added that plus a splash of white vinegar. Easy, relatively healthy, and tasty!

Good flavor after serval modifications. We found them to be a bit too thin and didn’t cook well. We added more pancake mix to thicken the mixture. May try this again in the future but with less applesauce or more pancake mix to start.

This recipe was good. I made it specifically to use up the last of a jar of applesauce and the last of some pancake mix. I didn’t have lemon juice so used orange juice. Next time I will use less cinnamon and chunky applesauce. Thanks for the recipe!!

I cut the recipe in half and otherwise followed the recipe except I eliminated the lemon juice. Next time will add it based on other reviewers. I used Kodiak Cakes Power Cakes which allows you to use either water or milk and egg. Even though I cut the recipe in half, I had to add another 1/4 cup milk just to make it scoopable. It was definitely not pourable. Hubby loved them and I thought they were good.

Me and my kids loved these, I used Hungry Jack complete mix just add water, I used 2 applesauce cups that were 4.5 ounces, mixed as directed, the batter appeared a little thick to me so I added I little more milk (I used 2%) I did sprinkle with Blueberries

These were pretty good. I made a half batch because they were just for my husband and myself. You really do need to watch them because they will burn quickly. All in all it is a pretty good recipe. I made it with Bisquick as I had no pancake mix on hand.

They didn’t have much flavor and you could not tell that there was applesauce in them, so they were okay. Could’ve been better. My tip if you’re going to make this is to be prepared because they take a while to cook compared to regular pancakes.

I made them gluten free by using Bob’s 1 to 1 flour. Needed to add a little bit more milk. Absolutely delicious. This recipe is a keeper.

I made as written using Kodiak Cakes pancake mix. Very average, too little spice and no applesauce flavor or moisture. I used sweetened, cinnamon applesauce. Won’t make again.
