Enoki Mushrooms

  4.8 – 5 reviews  • Side Dishes

For a simple, flavorful side dish that goes well with an Asian-inspired meal, enoki mushrooms are sautéed with garlic, ginger, and soy sauce. They would be fantastic when included in a stir-fry.

Prep Time: 5 mins
Cook Time: 5 mins
Total Time: 10 mins
Servings: 2

Ingredients

  1. 8 ounces enoki mushrooms
  2. 1 teaspoon sesame oil
  3. 1 large clove garlic, finely chopped
  4. 1 teaspoon low-sodium soy sauce (such as Bragg®)
  5. ½ teaspoon finely grated fresh ginger

Instructions

  1. Cut the bottom 2 inches off enoki mushrooms and discard. Separate mushroom strands gently.
  2. Heat oil in a medium-sized nonstick skillet over medium heat. Add garlic and cook until just fragrant, about 1 minute. Add mushrooms; cook and stir until they begin to wilt, about 2 minutes. Add soy sauce and ginger; toss to coat. Cook 1 to 2 minutes more.

Good stuff. I like the way you can twirl these little mushrooms on a fork.

I made the recipe exactly as is and the result was phenomenal! I’ve never made these before, but I will definitely be making them again! They remind me a bit of spaghetti-could be used as a gourmet gluten free noodle!
