Ingredients

  1. 6 orange bell peppers, tops and seeds removed
  2. 1 pound ground turkey
  3. ⅓ cup chopped onion
  4. 1 (14.5 ounce) can diced tomatoes, or more to taste
  5. ½ cup white rice
  6. ½ cup water
  7. 1 teaspoon liquid smoke flavoring
  8. 1 cup shredded Gouda cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of water to a boil; cook orange bell peppers in boiling water until slightly softened, about 5 minutes. Drain and set aside.
  3. Heat a large skillet over medium-high heat. Cook and stir turkey and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  4. Stir tomatoes, rice, 1/2 cup water, and liquid smoke into turkey mixture; cover the skillet and simmer until rice is tender, about 15 minutes. Remove the skillet from heat; stir in Gouda cheese.
  5. Stuff each orange bell pepper with turkey mixture and place peppers, open-side up, in a baking dish. Cover the dish with aluminum foil.
  6. Bake in the preheated oven until heated through and cheese is melted, 25 to 35 minutes.

This is an amazing recipe and pretty easy to make. The only thing I changed was that I added salt, pepper, and garlic salt for flavoring. Also I could not find Gouda cheese so I used shredded Mexican cheese.

Great recipe!! I made some changes. I used 2 cups of rice and cooked it in my rice maker with chicken broth instead of water. And I also used 3 pounds of ground turkey. Needless to say I made too much Rice mixture. I also added a can of tomato soup because I accidentally drained my tomatoes which I also use fire roasted diced tomatoes two cans. So because I drained my tomatoes there was no sauce for the rice and meat mixture so I added a can of tomato soup in a pinch. It worked out amazing!!!!

Made this recipe & it was a bit bland. I guess it needed a bit of salt. I used Colby cheese because that’s what I had on hand, and added garlic & 1/4 lb. ground beef to the turkey because I needed to get rid of it. My friend is sensitive to tomato paste (sauce) so if had been preparing for anyone else I would’ve used one of those. When I make without a recipe I use 1/2 can of tomato paste,which I prefer.

I made these. So yummy. I used 4 red peppers and 2 yellow peppers. I added garlic powder, paprika, mrs. Dash and pepper to the ground turkey with the onion. I also used 1/2 cup of chicken stick instead of water. I didn’t use the liquid smoke because I didn’t have any. I also used shredded mozzarella cheese instead of the Gouda cheese. I will definitely make these again.

Different style of stuffed peppers – came out very good. The mixture of liquid smoke and the gouda cheese gave it an interesting flavor I wasn’t sure I would like but I did. I thought the only thing it needed was salt and pepper.

I took the advice of other reviewers and added garlic pepper and some Italian seasoning. Also used chicken broth instead of water. This was delicious! Will be on my “keeper” list.

Worth making again with a few changes. I will try rotel instead of tomatoes and pepperjack cheese. It was just too bland.

I am giving this 3 stars because I found it to be a bit lacking in flavor. That said, I did make a couple of adaptations which may have affected the result. First, I halved the recipe for the two of us. I used green peppers because the orange ones were four times as expensive. I had a 14 oz. can of diced tomatoes and added the whole can (I hated to throw half of it away) instead of adding any water. A little added garlic, salt and pepper helped, but I would probably not make this again.

For the work that goes into it, it was a little bland. I did use chicken stock instead of water and also put in fresh garlic. It just needs a little more depth. Husband used hot sauce on his and I did barbecue sauce!

This is basically a stuffed pepper recipe using ground turkey versus another meat like beef or pork. Any changes made are to give flavor to the bland turkey taste.

I halved the recipe and sliced open the peppers for easier serving. I did add more of the diced tomatoes than indicated and added a banana pepper in the mix. One reviewer cooked the rice with broth and I did that as well to add some flavor. I only had cheddar and mozzarella so I did half cheddar and half mozzarella. I did top each pepper half with a little mozzarella. It was delicious!

I craved a stuffed pepper while pregnant but, needed it to be light as my morning sickness was a beast. I found this recipe and it was great for my entire pregnancy. I omitted the liquid smoke and just used a half of round of smoked Gouda. It was delicious and freezes great for later.
