Italian Sausage Soup with Tortellini

All the wonderful ingredients of Italian cuisine—Italian sausage, garlic, tomatoes, and red wine—are combined in this tortellini soup with sausage. Serve this delectable dish with hot bread and salad. Add a sprinkle of Parmesan cheese to each serving.

Ingredients

  1. 1 pound sweet Italian sausage, casings removed
  2. 1 cup chopped onion
  3. 2 cloves garlic, minced
  4. 5 cups beef broth
  5. 4 large tomatoes – peeled, seeded and chopped
  6. 1 (8 ounce) can tomato sauce
  7. 1 cup thinly sliced carrots
  8. ½ cup water
  9. ½ cup red wine
  10. ½ tablespoon packed fresh basil leaves
  11. ½ teaspoon dried oregano
  12. 1 ½ cups sliced zucchini
  13. 3 tablespoons chopped fresh parsley
  14. 8 ounces fresh tortellini pasta

Instructions

  1. Cook sausage in a 5-quart Dutch oven over medium-high heat until browned and crumbly, 8 to 10 minutes. Use a slotted spoon to transfer sausage to a paper towel-lined plate. Drain grease, reserving 1 tablespoon drippings in the pot.

  3. Sauté onions and garlic in drippings over medium heat until onions are translucent, 3 to 4 minutes.

  5. Stir in beef broth, tomatoes, tomato sauce, carrots, water, wine, basil, oregano, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
  6. Skim fat from soup. Stir in zucchini and parsley. Simmer covered for 30 minutes

Perfect as written. I modify based on what’s on hand. I use spicy sausage, add fresh bunch of chopped spinach, canned petite diced tomatoes instead of fresh, white wine vs red. If there are only two of you this freezes well and provides several delicious dinners. Just don’t add tortellini until you serve if you are going to freeze. Delicious with any variation!!

This soup is soooo good! I didn’t have the red wine. Didn’t miss it. Will be putting in freezer bags. Did put in spinach, half a small bag of baby carrots & used canned tomatoes instead of fresh.

Tought it was great! Left out the wine, only because I had none. Used chopped cherry tomatoes; did not peel or seed. Used Italiam moose sausage, so no need to drain fat. YUM!

This is a great base soup that you can use whatever you have in the house. I used the sausage, onion, garlic, oregano. I used mixed frozen vegetables and frozen spinach with 4 plus quarts of beef stock. I also used soup pasta instead of tortellini. I love to make a big pot of soup so I have leftovers for the freezer since there is only my husband and me. I also freeze the soup in gallon freezer bags, it takes up much less room in my freezer and defrosts much quicker. Thanks for the recipe

Been making this a long time and I have done many revisions over the years. I just came on to let you know my latest one that worked out really well. Also cooking it in a dutch oven is really key here. Used Better than Bouillion (Beef) instead of the Beef Broth. Used Tomato Paste (1 tablespoon) instead of the Tomato Sauce. The sweet sausage came out great with this. I have also used spicy in the past which added a nice kick. The cheese at the end I prefer either Monterey jack or muenster cheese instead of the parm. I just grate 1/2 a block and add it on once the soup is in the bowl. If you don’t have the wine it’s okay. The wine adds more depth of flavor to the soup but I didn’t have any this last batch and it still tasted great. I prefer it with wine but it’s not a deal-breaker if you don’t have it. Enjoy! This is a great soup on a cold day.
