Even my family who despises carrots like the delectable side dish made from simmering boiled carrots in butter and brown sugar! Never are any leftovers present.

Ingredients

  1. 1 pound baby carrots
  2. ⅓ cup brown sugar
  3. ¼ cup butter

Instructions

  1. Gather all ingredients.

  3. Cook carrots in a large pot of boiling water until tender, about 8 to 10 minutes.

  5. Strain carrots, leaving just enough of the cooking water to cover the bottom of the pan; set carrots aside.

  7. Stir in brown sugar and butter; simmer and stir until butter melts.

  9. Return carrots to the pot and toss to coat. Cover and let sit for a few minutes to allow flavors to mingle.

Yep, delicious! I used organic carrots slicing them with my food processor. I steamed mine then used real unsalted butter along with less brown sugar. So simple and tasty!

I followed the recipe exactly, but I did find it a little vague about how much water I should leave in the bottom of the pan. I will definitely leave less than I did the first time around. Overall, great recipe that was enjoyed by many.

It was kind of bland, so I sprinkled in some cinnamon. That helped a little bit. I was disappointed that it did not get a glaze on it. I drained all the wayer before adding the butter and brown sugar, but it was still very watery. Hubby liked it. Not sure if I’ll make it again.
