Chicken Parmesan Casserole

A great substitute for homemade chicken Parmesan is this simple casserole made with canned chicken.

Ingredients

  1. 2 cups rotini pasta
  2. 1 (12 ounce) can chicken chunks, drained
  3. 1 cup shredded mozzarella cheese
  4. 2 cups marinara sauce
  5. ½ cup seasoned bread crumbs

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Cook rotini in boiling water until tender yet firm to the bite, about 8 minutes. Drain.
  3. Stir together cooked rotini, chicken, and mozzarella cheese in a large casserole dish. Pour marinara sauce over pasta mixture; sprinkle with bread crumbs. Cover the dish with aluminum foil.
  4. Bake in the preheated oven until cheese is melted, about 35 minutes.

What a delicious yet simple recipe and my husband loved it! I do think the marinera sauce makes or breaks the dish so do choose a high quality sauce. I added a kale salad to the mix and it was the perfect weeknight dish, so easy to put together! Adding it to the rotation

This is a quick and inexpensive recipe. I was looking for a way to use some of the existing items in my pantry. I did substitute the marinara sauce for spaghetti sauce and added some Italian seasoning and parsley. Turned out really well. I will definitely be using this recipe in the future.

It works as a basic guide. Some slight changes: I deep fried breaded chicken breast filets, well seasoned, chopped into chunks, and layered this with the pasta, sauce, and cheese as though it were a lasagna. OH… and since it says ‘parmesan’ in the original title of the recipe, I figured I might use that as well. I mean, it just seems logical.

It’s other reviews said, I like more sauce, to each their own. This is quick and easy and really good. It’s all about picking the right pasta sauce. I prefer a tomato and basil flavored sauce for this personally

Hubby says this is a keeper. Great use for my left over tortellini. Several changes per other reviewers: I added raw red peppers & spices. I almost doubled the marinara sauce & should have added even more. Parmesan cheese mixed with the bread crumbs was a great addition.

Easy and tasty. Used left over chicken and, to parrot the others, it definitely needed more sauce. When I reheated the leftovers, I added the remain sauce in the jar. Very good!

I veganized this recipe with tofurkey chicken chunks and violife mozz cheese and it was delicious! The only other changes I made were to sauté some onion and garlic with the chicken and I used macaroni noodles because that’s what I had. I will definitely be making this again.

overall it was basic. I think my changes made it 5 stars. did 24 oz of sauce, churched up with onions and lots of Italian spices. and like 182822 cloves of garlic lol. then 2 lbs of chicken breast and a box of penne. 8 oz of mozz mixed throughout and on top broiled at the end.

I’m not the best cook. This was very easy and tasted pretty good. I used baked chicken breast instead of canned. I also added extra sauce and cheese. It was still missing something, needed a little more flavor.

I LOVE how easy this recipe is! From reading previous reviews, instead of just the 2 cups of sauce (I used Three Cheese pasta sauce from Fresh Thyme so it already had seasonings thrown in) I used the 2 cups to mix in to the ingredients and then topped it off with whatever was remaining of my jar as a layer on top! Found out I was out of bread crumbs so I just put a hefty layer of Parmesan cheese on top. It definitely wasn’t dry and I found adding a dollop or two of cottage cheese on top of my helping made it taste even better! I think this would also taste fantastic with turkey or beef 🙂 Definitely a good recipe if you’re trying to throw something together that doesn’t require a lot of prep!

I did exactly as the recipe said, personally I wanted more cheese & chicken!! I cook for 4, (one teen, is not a fan of red sauce but even she liked it!). My youngest and husband also asked for more chicken. For me it was so quick and easy for yummy the taste, an easy new go-to meal!
