Ingredients
- cooking spray
- 1 large egg
- ⅔ cup Original Bisquick® mix
- ½ cup grated Parmesan cheese
- ½ teaspoon salt or garlic salt
- ½ teaspoon paprika
- 3 boneless skinless chicken breast halves, cut crosswise into 1/2-inch strips
- 3 tablespoons butter, melted
Instructions
- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with foil; spray the foil with cooking spray.
- Beat egg in a shallow bowl. Mix Bisquick, cheese, salt, and paprika in 1-gallon resealable plastic bag.
- Dip 1/2 of the chicken strips into beaten egg. Lift up so excess egg drips back into the bowl; place chicken into the bag. Seal the bag and shake to coat. Transfer breaded chicken to the prepared baking sheet, and repeat with remaining chicken. Drizzle butter over chicken.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, 12 to 14 minutes, flipping halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Easy and delicious! I always hate it when people change a recipe and then review it. I did not have Bisquick so I did as some reviewers suggested and used bread crumbs. I actually used 1/3 c of bread crumbs and 1/3 c of pancake mix to hopefully make it closer to bisquick. Many people said it needed more spices so I did add 1 TBSP of Everything Bagel. I also drizzled it with garlic butter. My husband likes spicy things so I will put some cayenne in the dry mix after I coat my pieces next time. It was crispy cooked just as written but to add an extra bit of crisp I broiled it for about 2 minutes. It is definitely a keeper.
The next time I use this recipe, I will use chicken thighs as that is my favorite peace of the chicken. But this is a great recipe. I loved the breast slices. They were very tender and were not dry. This is an excellent recipe to use with other protein as well as chicken.
I’ve made these several times and they always turn out great.

Easy & good
We enjoyed the preparation with our girls but the end result was not so enjoyable. They didn’t seem to be quite done after 15 minutes and the taste was bland (bisquik). Eventually we added salt and barbeque sauce and baked a little longer.
This was very good. I would suggest using the finely grated parmesan, the type which comes in the tall shaker. I used freshly grated hard parmesan and found it separated from the Bisquick mixture. So I then sprinkled it on top of the chicken pieces. Also, I’d suggest using a little more melted butter/margarine to coat more thoroughly. All that aside, they cooked up evenly and had and were delicious! I will make this again!
The chicken fingers turned out great,but I did make a couple of substitutions and they worked just fine. I didn’t have any Bisquick so I used buttermilk pancake mix and I used 1T. butter and 2T olive oil. I did use my meat thermometer to be sure the chicken was at 165 degrees. I will make these again.

Used Italian breadcrumbs instead of Bisquick. Added the salt as directed. Plus 1/2 tsp garlic. Finally I found the recipe I was looking for!!
Most tender chicken ever! I used garlic powder, rather than garlic salt, and added onion powder. I used less melted butter. I think any hard, Parmesan-like cheese might work – I’ve mixed in Grana Padano for a stronger taste. Use fresh cheese that you grate yourself! Also, lined my cookie sheet with parchment paper – flipped over beautifully, no breading fell off. And, yes use the honey mustard sauce recipe that another reviewer provided – excellent! The first couple of times I prepared the chicken fingers, I tossed everything together in a bag, as directed. That way never seemed to coat them quite right. Now make them the traditional way – dip chicken in egg, dredge with Bisquick mixture, & place on pan. I bake & eat one whole chicken breast by myself, & call it a total dinner – not very balanced, but super comfort food!
Did not have garlic salt on hand so I used garlic powder and salt. Still turned out great!
For the breading, I doubled the ingredients and I also used two eggs instead of one. Cooked for about 25 minutes. A good substitute for bisquick would be panko!
I follow the recipe, and it is easy and delicious. A family favorite even with 2 picky eaters.

This was a good recipe. The chicken did not get crunchy but the flavor was good. Since I don’t use bisquick I went with dread crumbs. Will make again. Oh, I also used someone else’s suggestion and made a honey mustard dip (1/4 C mayo, 1 Tblsp yellow mustard, 1/2 Tblsp lemon juice, 1 Tblsp honey.) Yummy!!
