Comfort food from the South to warm your heart! Excellent with cornbread dipped in hot water! You could also use beef smoked sausage.

Ingredients

  1. 1 smoked turkey leg
  2. 3 links hot beef link sausage, diced
  3. ¼ cup finely chopped onion
  4. 1 tablespoon garlic salt
  5. 1 teaspoon ground black pepper
  6. 1 teaspoon seasoned salt
  7. 6 cups water, or as needed
  8. 3 (16 ounce) packages frozen black-eyed peas
  9. 1 teaspoon white sugar

Instructions

  1. Place the smoked turkey leg, sausage, onion, garlic salt, black pepper, and seasoned salt into a large soup pot; pour in water to cover. Bring to a boil over medium heat. Reduce heat and simmer until the meat is tender, about 1 hour.
  2. Stir the black-eyed peas into the soup, adding more water as needed to cover peas by 1 inch. Bring to a boil. Again reduce heat and simmer until the peas are tender and have begun to break apart, about 1 more hour.
  3. Remove turkey bones and tendons from the turkey meat and discard the bones. Add sugar and simmer until the soup is slightly creamy and thickened, stirring frequently, about 10 minutes

Delicious!I used the same exact ingredients except I used my pressure cooker, sautéed the onions and sausage first, then everything else in the pot for 35 minutes.

Two things. First, have never eaten or made black eyed peas before, and second, I have never made a pot of beans, stew, or anything that I have not had to “tweak” or add my personal touch to. This recipe is soooo delicious and required zero tweaking! I made it exactly as the recipe stated and while I’ve never had black eyed peas before, I have made plenty of beans and pea soups and recognize that the flavor profile created from the smoked Turkey is better in my opinion than any ham hock I’ve ever used. 5 stars all the way!

Followed the recipe exactly except for the spicy sausage….omitted that and used smoked turkey wings instead of legs. Came out fantastic! Huge hit! Will definitely be a staple at my house from now on.

I’m a Southern cook. I used a ham bone instead of the meat called for in recipe. Also used dried peas. Fresh garlic and honey instead of sugar. Cooked low and slow for hours. Excellent.

I made Tam’s recipe for New Year’s day. I didn’t use the sausage and it was incredible, everyone really loved this dish. After spooning up a bowl of these black-eyed peas I shook some Crystal hot sauce over the top and this gave some heat and another slight flavor profile which was incredible. I’m going to make them again in a few weeks, super good!

Sooooo good! Followed the instructions with the smoked turkey leg but also added in smoked beef sausage and used chicken broth instead (just enough to cover the meat). With all the smoked meat, I decided to skip the seasoned salt and sugar. I doubled my recipe and my family of 4 devoured it! My daughter had like 3 servings. Full of flavor!!! Will most definitely make again.

Perfect! Don’t add the salt seasoning until the end of cooking. Then allow it to sit for 30 minutes to allow seasoning to marinate or prepare the night before.

This is now my go-to recipe for black-eyed peas. However, I didn’t stop to think about the amount 3lbs of beans would make so I now have a year’s supply of frozen peas 🙂 The tast was very good, close to what Mom and my Grandmothers, and Aunts used to make. Even omitting some ingredients, it still tasted great. No turkey legs at the store, so I used two links of turkey sausage. Next time, I’ll listen and go with three. Didn’t have garlic salt, so used a little garlic powder. Didn’t have seasoning salt so used sea salt. Used dried beans after soaking over night. Still tasted great!!!!! The only change I’ll make next time is to cut the portions in half.

I made this dish for thanksgiving and people who don’t even eat black eyed peas went back for seconds. I left out the turkey and just added the beef hot links along with the other ingredients. I added about a tablespoon of cumin which brought out a lot of flavor. This recipe will be the ONLY way I make black eyed peas.

This one is a keeper. I used 2 New Orlean’s style beef sausage links. Since we wanted to eat this as a side dish and not a soup, I added just enough water to cover the peas instead of the 6 cups. The only think that would have set it off was corn bread!!! That’ll be added tomorrow with the left overs.
