Doritos Chicken Cheese Casserole

In a cake, quinces! Fresh quinces are used to decorate this cake made of polenta and almond flour with a tinge of orange. In addition to being gluten-free, the cake is delicious and delicate.

Ingredients

  1. cooking spray
  2. 1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos®), crushed
  3. 3 cups chopped cooked chicken
  4. 2 cups shredded Mexican cheese blend, divided
  5. 1 ½ cups salsa
  6. 1 (15.25 ounce) can corn, drained
  7. 1 (10.5 ounce) can condensed cream of mushroom soup
  8. 1 (10.5 ounce) can condensed cream of chicken soup
  9. 8 ounces sour cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 9×13-inch baking dish with cooking spray.
  2. Spread crushed chips out on the bottom of the prepared baking dish.
  3. Stir chicken, 1 cup cheese, salsa, corn, condensed soups, and sour cream together in a bowl. Pour chicken mixture over crushed chips into the baking dish.
  4. Bake in the preheated oven for 20 minutes. Spread remaining 1 cup cheese over the casserole and bake until cheese is melted and bubbling, about 5 minutes more.
  5. You can substitute 1 can of Ro-Tel canned tomatoes for the salsa.

Everyone loved it ! So much flavor. I ended up using chicken tenderloins and seasoned with S&P and Cajun seasoning and just cut them bite sized and browned them in a pan.. very filling! This is now saved a family favorite!

I added Mexican Spices(Taco seasonings) to chicken in the pre-cook before adding cut pieces to Soup mixture and cheese. The taste was awesome, this is one that definitely will be a repeat dinner choice.

Yummy. Although the recipe fails to tell you to add the can of corn. I also add a few more crushed doritos to the top with the extra cheese for the last 5 minutes.

Three stars because of the creamed soups. I nstead of the creamed soups, I highly recommend Progresso Chicken Cheese Enchilada Flavor soup. Layer chips, chicken mixture and cheese. Add another layer and top with chips.

I really liked this recipe, I did add taco seasoning like others suggested. You could add some black beans or some cooked rice. I topped it with lettuce and some tomatoes…Yummy!

My husband loved this! I threw it in the Crock Pot, omitted salsa/tomatoes, and used canned chicken, but that man all but gobbled it down! Even before the final cheese/Doritos topping! He just scooped it out and went to town. I love that kind of a recipe!

I was missing ingredients in my kitchen. So, I had to make some major compromises. However, I’m looking forward next time to following it exactly, and giving it a legitimate rating. I used tortilla chips, rotel, and made my own cream of chicken, left out the mushroom soup. It was still a success.

Great flavor but the consistency is more like a soup or chili. I added a can of black beans and well. Everyone loved it. only giving for stars because of consistency.

I left out the corn and used a bit more cheese. We didn’t have Doritos so I used Tostitos (almost the same thing). Tasted great!

Although it sounded really good just the way it is, I opted for Muenster & sharp cheddar cheeses. Instead of salsa I used a small can of diced green chilies & half of a 15oz. can of diced tomatoes with roasted garlic& onion carefully spooning it into the mixture so to include only some of the juice. I topped it with sliced black olives for presentation & bcuz I like em! My kids& I LOVED IT!!

Family loved it, used salsa instead of tomatoes, no corn, cream of chicken soup. Fresh chicken breasts instead of canned. Added scallions. Bottom of casserole dish with Doritos then spread mixture on top. Added more cheese 5 minutes before it was done. Next time I’d add black beans.

Used hot rotel instead of salsa and crumbled the Doritos on top during the last 5 mins of cooking. Did not layer them at the bottom. It was good!!

Where shall I begin….No.1, WAY too much Doritos; No. 2, serves way more than 6 (I used a lasagna pan and an additional 9x 9 pan); No. 3, recipe calls for corn; but, doesn’t include when to add (that was pretty much a no brainer tho). The flavor was good tho.

I added some taco seasoning to the chicken. I left out the cream of mushroom soup. I added about another cup of cheese. I split the Doritos, half on bottom and half on top. I also had to bake for 40 minutes instead of 25 to get it hot all the way thru. This was a very good casserole. I do think it could use another cup of chicken. Would be good as a dip served with chips too. Adding beans, olives, or jalapeños would be good additions. It makes a lot so I hope the leftovers reheat okay?

It’s so yummy! Used Mexican style rotes instead of salsa. Family favorite, for sure!!
