Dump-and-Go Instant Pot Tortilla Soup

  4.0 – 1 reviews  • Tortilla Soup Recipes

This is a super hands-off Instant Pot version of my favorite Allrecipes Six Can Tortilla Soup recipe. Feel free to customize the toppings with more of your favorite tortilla soup toppings, like diced avocado, sour cream, cilantro, diced red onion, etc. My rule of thumb with this soup is that if a topping is good on a taco, it’s also good on top of this soup.

  3. 1 (15 ounce) can black beans, rinsed and drained
  4. 2 (5 ounce) cans chicken breast chunks, drained
  5. 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  6. ½ teaspoon chili powder
  7. ½ teaspoon seasoning salt
  8. ½ teaspoon garlic powder
  9. 1 (3.5 ounce) package tortilla strips, for garnish
  10. 2 tablespoons shredded Mexican cheese blend, or to taste

I don’t care for canned chicken, so I buy a rotisserie chicken every time I go to Sam’s. I then remove the meat from the bones, bag it, and freeze it for recipes like this. I also make bone broth from the carcass. That’s what I used instead of canned chicken broth. I’m so glad fabeveryday included spices in this recipe. They really help to add more flavor! I topped my soup with homemade tortilla chips, cheese, and sour cream.
