Ingredients

  1. ½ pound sweet Italian pork sausage, cut into 1/2-inch slices
  2. 1 large onion, chopped
  3. 1 stalk celery, finely chopped
  4. 1 tablespoon chopped garlic
  5. 8 cups water
  6. 2 (14.5 ounce) cans chicken broth
  7. 1 (28 ounce) can diced tomatoes
  8. 1 (16 ounce) package dry lentils, rinsed
  9. 1 cup shredded carrot
  10. 1 tablespoon garlic powder
  11. 1 tablespoon chopped fresh parsley
  12. 1 tablespoon salt, or to taste
  13. ½ teaspoon black pepper
  14. ½ teaspoon dried oregano
  15. ¼ teaspoon dried thyme
  16. ¼ teaspoon dried basil
  17. 2 large bay leaves
  18. ½ pound ditalini pasta (Optional)

Instructions

  1. Cook sausage in a large pot over medium-high heat until evenly brown, 7 to 10 minutes. Add onion, celery, and garlic; sauté until tender and translucent, about 5 minutes. Stir in water, chicken broth, tomatoes, lentils, carrot, garlic powder, parsley, salt, pepper, oregano, thyme, basil, and bay leaves; bring to a boil. Reduce the heat, cover, and simmer until lentils are tender, 2 1/2 to 3 hours.
  2. Stir in pasta and cook until tender, 15 to 20 minutes. Remove bay leaves before serving.

I made this for my picky teenager. Years ago, got tired of hearing kids telling me my food was yucky. My question is always make it again or not, instead of what did you think. My daughter told me I could absolutely make it again. I used bulk sausage but used half the amount. Added spinach, cus I add green leafy to just about everything. Healthy and yummy!

This was fairly simple to make and very tasty. The consistency was perfect. I put the pasta in the first time but it does tend to turn to mush with progressive reheatings; on the bright side, it makes a small amount of natural thickener. My husband said he prefers it without the sausage, so the flavor definitely stands alone!

With all the ingredients, it ended up not fitting in my big stew pot, so then last minute I ended up pouring some out into another pot, and then finished adding the ingredients. Having two pots of the soup might have made the water levels interesting because it came out very dry. Super, super dry. For left overs I have been putting a ton of water in the microwavable bowl before heating it and that seems to soften the food, but not really create a soup texture.

Excellent soup! I used ground Italian sausage, all stock no water, and a little bit of smoked sea salt. Did not add pasta. We did add some crushed red pepper flakes to individual bowls which gave it a nice kick; may just used hot Italian sausage next time. Only cooked it about 2 hours and it was perfect.

This lentil soup is delicious! Made it as directed and it was not difficult at all. Making it again tomorrow and will use hot Italian sausage rather than sweet for an added kick. Will eliminate the pasta (carbs).

This is hearty and very flavorful. Really enjoyed this one. I made it pretty much according to the recipe. I didn’t have fresh parsley so went with dried. Used a can of whole tomatoes instead of diced. Used ground Italian Sausage (which I think made the broth even better). And went with about 10 cups of fluid, including chicken broth. And most importantly I only cooked it about an hour and a half. Just check the lentils and carrots every now and then until they’re as you like them.

We really loved this recipe. I doubled the sausage (not links, ground sausage) and dare I say that I may even triple it next time. I didn’t add the add the pasta so I used 8 cups broth and no water.

Delicious! I used French green lentils (puy lentils) and after the initial veg sauté cooked it in my instant pot for 10 minute and 15 minutes natural release. I also had some mushrooms and zucchini that needed to be used, so tossed that in as well (prior to pressure cook). I only used about 1tsp of salt, but added some Tony Chachare’s creole seasoning at the end.

I cooked this in the pressure cooker for 25 minutes at 15 lbs. pressure after browning the sausage in a skillet. I cooked the pasta separately and added it at the end. For the second batch, I doubled the dried herbs and reduced the salt to 1 tsp. I love it!

This is a great recipe! I added twice the sausage, left out the celery, didn’t have a Bay leaf, added more chicken broth compared to water and only simmered for 1 1/2 hours then added the ditilini which was a great addition. Very delicious and hearty !

Delicious! Was looking for something different for my Italian New Years Day lentils! I made the recipe exactly as written except I substituted cubed sweet potato for the pasta, came out great !
