Ingredients
- 1 tablespoon vegetable oil
- 3 skinless, boneless chicken breast halves – cut into 1 inch cubes
- 1 white onion, chopped
- 2 cloves garlic, finely chopped
- 1 (28 ounce) can peeled and crushed tomatoes
- 4 button mushrooms, chopped
- ½ teaspoon Italian seasoning
- ½ teaspoon white sugar
- 4 cups uncooked rotini pasta
- ¼ cup grated Parmesan cheese for topping
Instructions
- Heat oil in a large skillet over medium heat. Sauté chicken, onion, and garlic in hot oil until chicken is mostly cooked through, about 10 minutes. Stir in crushed tomatoes, mushrooms, and Italian seasoning. Cook, stirring frequently, for about 5 minutes.
- Reduce heat, stir in sugar, and simmer for at least 15 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain.
- Serve rotini topped with chicken mixture and grated Parmesan cheese.

I was looking for something different to do with chicken, and this was great. I sauted the chicken pieces in olive oil with onion and garlic (home grown). I used a 28 oz can of diced tomatoes by mistake, which took a little longer to cook down, which made it a bit chunky. I’ll try it with crushed tomatoes next time! I also added Italian seasoning and fresh basil. Served over tri colored rigatoni like the picture because I had it! Definitely a keeper!
This was so good! I had all the ingredients in my pantry. I used Cavatappi pasta rather than Rotini pasta.
I added some green beans and doubled the recipe. Delicious! Hard to please all in a family of 4, but this does it!
I also added a 6oz. can of tomatoe paste and a splash of water to thicken it up a little. Used a whole tub of sliced mushrooms may use a little less mushrooms next time and more chicken
This has become a family favorite! I add zucchini and fresh basil, so good!
We had this tonight for dinner. I agree with the other posters that it was watery and lacking in the spice department. I think that by thickening the sauce and adding some fresh veggies and herbs, it will be really good.
This was decent although it was a bit bland as others mentioned. I did add a green pepper and some crushed red pepper for some kick. Nice simple supper. I would certainly make it again with a bit more seasoning.

Quick and easy. The sauce was light and is a good base for adding other ingredients, as well as being good on its own. I almost always have the ingredients for this sitting around, so it’s a great go-to method when I don’t know what else to make.

I was craving chicken with pasta for weeks, so I was thrilled when I found this recipe. We didn’t even have to go buy any groceries first! It was much tastier than the plain old pasta and sauce we usually have. We only used half the onion, and I think next time I will use more seasoning… but it was definitely a hit. I’ll make it again for sure.

I was surprised at good this was considering how easy it was to make. I altered the ingredients slightly (I like my sauces on the spicy side). I thought that the recipe called for too much onion but I used a whole one anyway. Glad that I did as I think thats what made the recipe. Between the onion and not using any paste, this is the perfect summer sauce. I’m looking fwd to making this again, but with hot sausage instead of chicken.
Unexciting, though not bad. Basically, you’re making your own spaghetti sauce (with chicken). It’s nice that the tomatoes are in somewhat discrete chunks, as are the mushrooms and onion, but really there is no special flavor to this dish other than traditional unexciting spaghetti sauce.
I made this for my family as an alternative to the usual beef bolognaise and was happily surprised!! Was really tasty and everyone cleared their plates. Will definately be making it again!
Tried this last nite for a change regular pasta & sauce, and was surprised at how good it really is! I did leave out the mushrooms, and added a can of tomato sauce to make it go further. I also added an extra clove of garlic (YUM) and everyone really liked it!
