A substantial version of the well-known Christmas recipe that can be used as a main dish or a side dish is this green bean and sausage casserole.

Ingredients

  1. 2 cups uncooked brown rice
  2. 2 cups water
  3. 1 teaspoon salt
  4. 1 (12 fluid ounce) can evaporated milk
  5. ½ cup pure maple syrup
  6. 1 ½ teaspoons ground cinnamon
  7. 1 teaspoon ground nutmeg
  8. 1 tablespoon vanilla extract
  9. ½ teaspoon rum extract

Instructions

  1. Bring the rice, water, and salt to a boil in a pot; cover, reduce heat to medium-low, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
  2. Stir the evaporated milk, maple syrup, cinnamon, nutmeg, vanilla extract, and rum extract into the cooked rice. Continue simmering until the mixture thickens, about 5 minutes. Remove from heat and cover until ready to serve.

This turned out very good. I ate some warm after a light dinner this evening. I’m looking forward to eating some for breakfast. It seems to me more of a breakfast rice than a dessert. The maple syrup is very tasty in it. I left out the rum extract and cut down on the nutmeg. I used a quick cook brown rice, so I followed the package directions to cook the rice and then followed the recipe from once the rice was cooked.

As the first reviewer, I’m sorry to give this such a low rating, but the end result was inedible. I liked all of the ingredients, but they just didn’t come together. I think there was too much nutmeg and the rum extract tasted out of place. I tried this once the day I made it and once the following day, thinking it might taste better after giving the flavors a chance to come together, but there was no improvement.
