This is a great flavor to select from. You’ll definitely feel festive after tasting the orange and cranberry flavors. The next morning, it tastes even better.

Ingredients

  1. cooking spray
  2. ½ cup orange juice
  3. ¼ cup olive oil
  4. 6 cloves garlic, minced
  5. 2 tablespoons Dijon mustard
  6. 2 tablespoons lemon juice
  7. 1 ½ tablespoons crushed dried oregano
  8. 1 ½ teaspoons salt
  9. 1 teaspoon ground black pepper
  10. 1 teaspoon ground cumin
  11. 1 teaspoon ground turmeric
  12. 3 pounds fingerling potatoes
  13. 3 tablespoons chopped fresh thyme

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Spray a 9×13-inch glass baking dish with cooking spray.
  2. Combine orange juice, olive oil, garlic, mustard, lemon juice, oregano, salt, pepper, cumin, and turmeric in a food processor; pulse to get a thick sauce.
  3. Place potatoes in the prepared pan and pour sauce over top. Toss to coat.
  4. Bake, covered, in the preheated oven for 40 minutes. Uncover and continue to bake until potatoes are tender, about 20 minutes more. Top with fresh thyme.
  5. You can use dried thyme instead of dried oregano, and fresh oregano instead of fresh thyme for topping.

These potatoes were just so-so. I found them a little bland and nothing special. I probably won’t cook these again as there are far better recipes for potatoes on this site. (Ex. Lemon Horseradish Potatoes.)
