A cute complement to any Valentine’s package is this dressed-up cookie. With a variety of sprinkles and tiny sugar hearts, feel free to decorate anyway you like.

Ingredients

  1. 1 ½ pounds salmon fillets
  2. 2 teaspoons lemon juice
  3. 1 teaspoon lemon zest
  4. 1 clove garlic, minced
  5. 2 tablespoons extra-virgin olive oil
  6. 2 tablespoons soy sauce
  7. ⅓ cup brown sugar
  8. 1 pinch salt to taste

Instructions

  1. Stir together lemon juice, lemon zest, soy sauce, brown sugar, garlic and olive oil in a 9×13-inch glass baking dish until sugar is dissolved, about 2 minutes. Place fish flesh side down in mixture and refrigerate for 30 minutes.
  2. Preheat an outdoor grill for medium-high heat and lightly oil grate.
  3. Place salmon on preheated grill and discard marinade.
  4. Cook salmon until fish flakes easily with a fork, 6 to 8 minutes.

Im a Texas girl, so grilling is in my dna. This is easy, simple and fast. I make this salmon at least twice a month. Don’t skip the lemon zest. I did once, and it was not the same.

This will be added to my rotation of ways to cook salmon! I used a little less than 1/4 cup brown sugar and about 4tsp olive oil and 2 large cloves of garlic. This was so delicious but I think I could have even less brown sugar! I was surprised the flavors didn’t overpower the salmon! Definitely worth trying!!

Please explain how this is “healthy”. Brown sugar and soy sauce? Plus option for ADDING salt? This might be a tasty dish indeed but certainly not healthy.
