Brownie Bites with Sea Salt

A 30-minute homemade salsa can be produced by broiling some tomatoes, onions, serrano peppers, and garlic before blending them with seasonings, cilantro, and lime juice.

Ingredients

  1. 1 cup unsalted butter, at room temperature
  2. 2 cups white sugar
  3. 4 eggs
  4. 2 teaspoons vanilla extract
  5. 1 cup all-purpose flour
  6. ⅔ cup unsweetened cocoa powder
  7. ½ teaspoon baking powder
  8. ½ teaspoon salt
  9. fleur de sel (sea salt flakes) to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a mini muffin tin with plain or seasonally colored paper liners.
  2. Combine butter, sugar, eggs, and vanilla extract in a large bowl. Mix vigorously with a wire whisk until butter is incorporated but you can still see bubbles of butter in the batter. Add flour, cocoa powder, baking powder, and salt. Mix gently until just incorporated; do not overmix.
  3. Divide batter among the muffin cups using a small ice cream scoop. Gently cover the top of the brownies with a dusting of sea salt flakes.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 10 to 15 minutes. Transfer to wire racks to cool.
  5. You can freeze these bars or bites and they will travel really well. Keep in the fridge for up to a week (make sure you use the fridge because of all the butter).
  6. Be sure to experiment with the salt level. We created this recipe to mimic the Trader Joe’s(R) Sea Salt Brownie Bites. These are slight fluffier without being cake-like.

I can’t figure out what I did wrong. This recipe made 50 , not 24. I baked them at least twice as long & they were still not set. Could not get them out of the pans. It seemed the butter all settled in the bottom of each cup creating a greasy mess, dripping everywhere. So disappointed because chocolate, butter & salt are my favorite flavors.

Oh my! First of all, the recipe did not make 24 little brownie cups, it made 60, each one overflowing its cup. Couldn’t get them out of the pan, they were molded together and fell apart terribly when I tried to remove them. Had to let them cool first, then they came out. Should have told me that. However, they taste OK, but I will never make them again. So sorry. 🙁

Very good brownie recipe. I wasn’t able to find the fleur de sel, so I used Himalayan Pink Salt. I could taste the salt and it definitely elevated the flavor of the brownie. I would definitely make these again.
