Gluten-Free Banana Oatmeal Muffins

Ingredients

  1. 1 ½ cups gluten-free flour blend (such as Namaste®)
  2. 1 cup gluten-free quick-cooking oats
  3. ¼ cup white sugar
  4. 2 teaspoons baking powder
  5. 1 teaspoon baking soda
  6. ½ teaspoon salt
  7. 1 egg
  8. 1 cup milk
  9. ⅓ cup applesauce
  10. ½ teaspoon vanilla extract
  11. 1 cup mashed banana

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with parchment baking cups.
  2. Combine flour, oats, sugar, baking powder, baking soda, and salt in a bowl.
  3. Beat egg lightly in a large bowl. Stir in milk, applesauce, and vanilla extract. Add mashed banana and combine thoroughly. Stir flour mixture into the banana mixture until just combined. Divide batter evenly between the prepared muffin cups.
  4. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 18 to 20 minutes.
  5. You can use oil instead of applesauce, or a combination of the two.
  6. Add a couple handfuls of mini chocolate chips if you like.
  7. You can also bake these in a 29-cup lined mini muffin tin, but baking time will be shorter.

Made a half batch using ingredient ratios, but some different ingredients. They turned out great, have saved recipe for the future. This will be my go to go muffin recipe.

They turned out decent, and I liked that they weren’t too unhealthy, but my goodness, I could not for the life of me get the paper off the muffins! At first chunks of muffin stuck to it, so I thought it was just a matter of waiting for them to fully cool. Now that they have, the paper sticks to them and I have to carve the paper off with a knife. Sheesh, I did everything as written too. I wonder if it would work better to grease the paper itself or to just not use any paper, but I don’t know if I’ll be trying these again.
