Pecan Chicken Salad with Apples and Grapes

Tortellini that has been refrigerated is of good quality and is ideal for a quick weekday meal. Although rich, silky, and decadent, Alfredo sauce is occasionally worth the expense since it makes you look like a fantastic cook.

Ingredients

  1. 2 cups chopped cold rotisserie or roasted chicken
  2. ½ cup chopped celery
  3. 1 Fuji apple – washed, cored, and chopped
  4. 1 cup red grapes, halved
  5. ½ cup chopped pecans
  6. ½ cup mayonnaise
  7. 3 tablespoons Thousand Island dressing
  8. 1 tablespoon minced red onion, or to taste
  9. ½ teaspoon ground ginger
  10. ¼ teaspoon curry powder
  11. ¼ teaspoon dry mustard
  12. salt and ground black pepper to taste

Instructions

  1. Combine chicken, celery, apple, grapes, and pecans in a large bowl.
  2. Combine mayonnaise, Thousand Island Dressing, onion, ginger, curry powder, and dry mustard in a small bowl. Whisk together and pour dressing over salad ingredients. Mix to combine. Season with salt and pepper.
  3. Add more mayonnaise for a creamier salad, and adjust the seasonings as desired.

Delicious exactly as written. Used leftover turkey from Thanksgiving dinner instead of chicken. Outside of that, I didn’t change a thing. Will definitely make again and again!
