A light brunch would be ideal. Really simple to make. It’s recommended to eat smaller servings because it’s a tad on the rich side.

Ingredients

  1. 1 ¾ cups all-purpose flour
  2. ¾ cup white sugar
  3. 3 teaspoons baking powder
  4. 1 teaspoon ground cardamom
  5. ¾ cup milk
  6. 1 ½ tablespoons milk
  7. ½ stick butter, melted
  8. 1 teaspoon vanilla extract
  9. 1 ½ Granny Smith apples, peeled and sliced
  10. 2 tablespoons pearl sugar (Optional)
  11. ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 1/2-inch round baking pan.
  2. Mix flour, sugar, baking powder, and cardamom together in a bowl. Add 3/4 cup plus 1 1/2 tablespoons milk, melted butter, and vanilla extract; stir until combined.
  3. Pour batter into the greased baking pan. Arrange apple slices over the top. Press them firmly into the batter, but make sure the slices are still visible. Sprinkle pearl sugar and cinnamon over the apples.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes.

This was an easy cake to make, and it was good, but more like a cobbler than cake. Next time I make this, I will double the apples, putting them on the bottom of the pan too, double the spice and add an egg to the mix to make it more of a cake.

The flavor of this cake is so good–it isn’t too sweet, which really allows the apples to shine. I was surprised at just how buttery the cake part tasted with only having 1/4 cup melted butter in it (I was also surprised to see no egg in the recipe either). Regardless, the cake is delicious and has a wonderful texture. The only changes I made were to use 1 1/2 tsps cardamom (because I really love it) and to add 1/2 tsp salt. I baked this in a 9 inch springform pan, and it took 55 minutes to bake. So, I would definitely keep an eye on your bake time–as 40 minutes was not enough for my cake. Thank you for the recipe–this is a wonderful cake!

Great cake for coffee or dessert with ice cream. Cardamom is so good. Perfect for small batch cooking.
