Linguine with Clams

One of my favorite dinners is this one. With a salad and some garlic bread, this is perfect.

Ingredients

  1. 1 (16 ounce) package linguine pasta
  2. 8 tablespoons unsalted butter
  3. 1 medium white onion, chopped
  4. 8 ounces fresh mushrooms, sliced
  5. 4 cloves garlic, pressed
  6. 1 cup dry white wine
  7. 4 (6.5 ounce) cans chopped clams, drained and rinsed with juices reserved
  8. 2 tablespoons sour cream
  9. freshly ground black pepper
  10. ¼ cup chopped flat leaf parsley

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, or until al dente. Drain and set aside.
  2. Melt butter over medium-high heat in a large skillet. Add onions, mushrooms, and garlic, and saute until tender. Pour in wine and simmer for 10 minutes, reducing heat if necessary.
  3. Stir in clams, reserved clam juice, sour cream, pepper, and parsley, and simmer another 20 minutes. Toss with linguine, and serve. Enjoy!

I like this recipe. I’d double the veggies and sauce for more, and to be able to have good leftovers. I like the clams, but we had a vegetarian, so used veg stock and it was good.

This was a terrible wast of money. I followed the recipe exactly, and it was as bland as could be and very watery. Why would you take canned clams, rinse them, save the clam juice and then add the clams AND the reserved juice later in the same recipe? It doesn’t make any sense. Also the simmer times are way too long. Simmer 10 minutes, add clams and simmer another 20 minutes? That’s ridiculous. It was horrible and I was embarrassed because I was cooking for other people. Never again.

Yes love it.made some changes ( had to ) used powder onions and garlic ,and a very little corn starch.Had to find recipe because opened a can of clams thinking it’s chicken lol. Next time will have it for sure with some chicken,will be very good.Make it you will be not sorry!

With a couple of additions this cane out great. I added the zest and juice of one lemon to butter mixture and added extra garlic, some black pepper and used a cup of chicken broth instead of the wine because I didn’t have any. I liked it and would make it again.

So good and easy to make. Seemed like my clams had a slightly excessive amount of liquid- over 2 cups – but it did reduce well. I did add quite a bit more garlic as we love garlic in our house but all in all it was delicious!!

I made it exactly as submitted and will make it that way again. Oh, except I didn’t rinse the clams. I couldn’t figure out why that would matter. Thank you for this excellent recipe.

I used this recipe as a base. I omitted mushrooms (hubby hates them) but I added approx 3 Tblsp grated Parmesan/Romano cheese, and a little heavy cream to make it into more of a sauce. I got two thumbs up!!!!

Loved it ! The only thing is if you want a creamier sauce add more sour cream and parm to taste & a few sprinkles of red chili pepper for a little kick as needed. We live in the PNW so we bought 20 lbs of fresh clams for a family feed ! I made pots of clams separate then some with this recipe and of course lots of garlic bread ! If you’re feeling adventorous then add heavy cream to the clams. Even a saffron creamy mix is delicious !!!

There are two basic recipes for this on all recipes and I pulled from each. Next time I would cut the mushrooms up into smaller pieces so it all fits into one bite.

I made this tonight! Never dreamed of adding sour cream! It was great! I always add some crushed red pepper because I like it. I also used lemon pepper because I like that too! I also added some frozen green peas for a one pot meal and color, and yes…I like it! I usually make this with fresh clams added also but having only canned on hand was great and fast!

This recipe is great! My whole family loved it! I omitted the mushrooms both times. Second time made it with chicken broth instead of white wine. Still awesome! The sour cream makes it!!!!
